• Mo's Chicken Cordon Bleu Pizza


    I took my favorite Chicken Cordon Bleu recipe and turned it into a pizza...Simply to die for!


    Mo's Chicken Cordon Bleu Pizza

    3 TBSP flour
    1 tsp paprika
    4 boneless, skinless chicken breasts
    4 TBSP butter
    1/2 cup water
    1 chicken bouillon cube or envelope
    2 TBSP corn starch
    2 cups 2% milk
    1 homemade or bought pizza dough
    12 oz. of swiss cheese
    8 oz. old fashioned deli ham (diced)
    2 cups mozzarella cheese, grated

    Yield: 1 large pizza


    Sauce:

    Mix flour and paprika on a large dinner plate, Add chicken to the flour mixture and coat all pieces well. Melt butter in skillet on medium heat and cook chicken until no longer pink. Remove and set aside chicken. Once chicken is cooled, cut into 1/2-inch cubes. Set aside. Add water to skillet to loosen up baked-on chicken and add chicken bouillon. In 2 cups of milk, dissolve cornstarch well and add the milk mixture to the skillet. Cook on low until thickened, stirring often. When thickened, place sauce into a bowl and set aside.

    Preheat oven to 400 degrees.

    Roll out dough on a lightly floured surface. Lightly oil a pizza pan with olive oil and place dough on pan. Pre-bake crust until puffed and beginning to color, about 6 - 8 minutes. Remove from oven.

    Spoon sauce on crust. Top with 1/2 the swiss cheese and 1/2 of the mozzarella, then chicken, then ham and the rest of the swiss and mozzarella cheeses. Bake in preheated 400 degree oven for 15 to 20 minutes or until crust is golden and the cheese has melted. Remove from oven and allow pizza to sit for about 5 minutes. Dig in and enjoy!
