    Angry ? Grainy Caramel Icing ????

    I made an Apple Cake this week as I have done for many years...and the caramel icing turned out GRAINY!!! WHY?????

    I would think the sugar wasn't disolved completely?

    I agree with Jana, sugar not cooked long enough, but if I remember right, if you over cook it, it can become grainy also. But, that's me thinking, and when I think, it gets scary!!!

    recipe called for 1 cup packed light brown sugar
    1 stick butter
    1/4 c. evaporated milk
    1 tsp. vanilla
    Melt butter...when hot add sugar and milk and stir until it comes to a rolling boil. Boil for 2 minutes. Remove from heat and add vanilla. Beat with hand mixer until desired thickness.

    I think it's also like fudge in that whether or not it is raining or very humid can make a difference. I'd bet it still tastes good though.
