    Default Turkey gizzards..neck..etc..what to do with?

    What do you all do with the little presents that are inside the turkey after you unwrap it from the store?

    One year I forgot to take the the little bags of gizzards and such out and cooked them still inside the turkey. It was kind of a shock to cut into the bird and see a plastic white bag peeking out.

    I usually throw it all away, but I think dh wants me to fry up the gizzards this year.

    Here in the mid-Atlantic most of us (natives of the area at least) have sauerkraut with our turkey, so I always use at least half of the neck to cook with the sauerkraut and a bit of finely chopped apple. I then pull the meat from the neck and stir it through the kraut. The other half, along with the 'innards', I simmer gently with seasoning and a bit of celery, carrot and onion to make additional turkey stock for the gravy.

    Put them in a sauce pan, cover them with water and boil them, that will give you some more turkey broth for gravy, or to use in your dressing/stuffing. I chop up the giblets and pull some meat off the neck to put in each also.

    I boil them to make the broth. My grandmother always pulled the meat off the neck, chopped the liver & gizzard, then mixed part of it in the dressing & the rest in the gravy. Mine don't like much, if any, of it in either, so I just sneak some in the dressing & let it go at that. (My 1st attempt at a turkey also had the bag inside--which nobody told me about)

    I boil the neck and gizzards for the gravy too. I fry up the liver and the heart to give the doggie and kitties a teeny Thanksgiving treat!

    I use them to make giblet gravy and then cut up anything edible for the cats.

    I usually put the neck on top of my crockpot dressing for added turkey flavour. Occasionally I'll slice up the giblets for the dressing but I'm not consistent with that.

    I do the same, add them to the celery tops and the onion peels with all my cans of chicken stock and the drippings off my bird, I like to get some of the dripping out of the pan half way though but I don't neck and liver and heart to the dog......my mom love to eat them before I get a chance ......LOL

    I do what Nu does to help make richer gravy. Years ago, I started to add diced up celery and carrots into my gravy and now my gang refuses to eat it any other way! DD who is in grad school 4 hours from home now is looking more forward to my "gravy with yummy veggies" (as she calls it) than anything else of the meal, LOL. Don't know why it gets her excited, but it does!
