    Default What to do with a big can of pumpkin pie mix?

    I have this can and don't really know what to do with it besides make a pie and I don't feel like it. I thought about making bars, but don't you just use pumpkin, not the pumpkin pie mix? Thoughts?

    Well I checked out the Very Best Baking website for Libby's and it just says that they are pretty much one in the same for recipes. Which I find weird cuz I kept seeing it say in reicpes NOT to interchange them. Hmm. Oh well. I guess I will make the bars or maybe a cake. Any great recipes floating around out there?

    PUMPKIN MUFFINS

    Easy and rich tasting.

    1 Egg
    2 C White sugar
    1-1/2 C vegetable oil (or replace part or all of the oil with pureed fruit but reduce sugar)
    1 can pumpkin (14 oz) or use homemade pumpkin puree
    3 C All purpose flour
    1 Tbsp. Cinnamon
    2 Tsp. Baking powder
    2 Tsp. Baking soda
    1 Tsp. Salt
    2 C Sultana raisins (or 1 C each raisins and nuts)

    In large bowl, beat eggs well Add sugar, oil and pumpkin to eggs and mix well. Add remaining ingredients and combine well. Bake for 15 minutes in 400F oven.

    Thanks guys, sound good. Mmmm. I was denying that fall is coming, but then I heard my friend mention the pumpkin spice latte at Starbucks and that did it for me lol.

    You can interchange it in any recipe that calls for pumpkin. The pumpkin pie mix already has the spices added to it, so if you substitute it in a recipe that just calls for pumpkin, leave out the extra cinnamon/nutmeg/ginger, etc.

    In our last swap, I received a jar of Pumpkin Butter. It is amazingly good....
    I bet that is easy to make!

    I 2nd the streusal bar recipe. I made it sometimes and we really like it.
    I don't want buns of steel. I want buns of cinnamon !!!
