Default What spices do you put in your split pea soup?

Since Aunt Patsy's discontinued their soup line, I guess I'm gonna have to start making it from scratch. *big sigh*

A bay leaf to be removed later (person who gets it traditionally gets to kiss the cook---but I take it out when the soup is done for safety sake).

    Pepper.

    That's it!

I've used this recipe for over 25 years. It was one of my late husband's favorites.

    Split Pea Soup

1 pkg. (1 pound) green split peas
    2 quarts water
    1 teaspoon pepper
    1 bay leaf
    1 teaspoon dried thyme, crumbled
    2 whole cloves
1 large onion, peeled but left whole
2 medium potatoes, pared and diced (3 cups)
1/2 pound cooked ham, diced (1 1/2 cups)
1/2 pound smoked sausage, sliced (1 cup)
2 large leeks, well washed and sliced
2 large ribs celery, thinly sliced
2 large carrots, peeled and diced

Wash and sort peas. Combine peas, water, pepper, bay leaf and thyme in large kettle or Dutch oven. Press cloves into onion; add to kettle.

Bring pea mixture to boiling. Lower heat, cover and simmer, stirring occasionally, until peas are tender, about 1 hour.

Remove onion and bay leaf. Puree soup in a blender, or in the kettle with an immersion blender.

Add potatoes, ham, sausage, leeks, celery, and carrots. Simmer, uncovered, until vegetables are tender, about 45 minutes.

This is great with a dollop of sour cream in the bowl, or with a bit of sherry stirred in. Also, feel free to vary the meat -- use all ham or sausage, cook a ham bone in the soup, etc. The original recipe called for 1 teaspoon of salt in the pea mixture, but I felt that the ham and sausage added enough salt.

I add worchestershire sauce to mine .. they laughed at me at the cafe last week when I asked for the sauce for my soup.

Never made split pea soup from scratch though .. I just have a bowl a couple times a year.
