    Default what to do with canned lemon pie filling?

    I've had this can sitting on the shelf and I can't remember why I bought it. Any ideas for what to do with it? So far all I can think of is between layered white cake frosted with whipped cream.

    I just thought of making a jelly roll and putting it in there. I haven't made one of them in ages.

    Put about half a tub of cool whip and fold it in to make it a bit lighter then put it in some mini graham cracker crust shells and top with remaining cool whip

    Get a spoon out and eat it..... Lol i prefer the filling to the crust or meringue, i give both of those to dh when i have pie.

    Thanks for the ideas. I may have to buy another can. I used to mix cool whip and lemon pudding. I never thought to put it in crusts, that sounds yummy!

    I had a recipe for a lemon cake using canned lemon pie filling.....I don't know if I still have it. I'd have to do some searching in my recipe drawer. (it's a mess)

    I found this one.

    1 pkg lemon cake mix
    4 eggs
    1 can lemon pie filling (15 3/4oz)

    Frosting
    1 pkg (3oz) cream cheese, softened
    1/2 cup butter or margarine, softened
    2 cups powdered sugar
    1 1/2 tsp. vanilla

    In a large mixing bowl, beat cake mix & eggs until well blended. Fold in pie filling. Spread into grased 15x10x1 in. baking pan. Bake at 350 for 18-20 min. or until a toothpick inserted near center comes out clean. Cool on a wire rack.

    In a small mixing bowl, beat cream cheese, butter and powdered sugar until smooth. Stir in vanilla. Speard on cake. Store in refrigerator.

    I make mine pie a little different than Baking Queen

    1 can lemon pie filling
    1 tub (8 oz) Cool Whip
    1 graham cracker pie crust

    Fold 1/2 can lemon pie filling in with the tub of Cool Whip. Spread in pie crust
    Spread remaining 1/2 can lemon pie filling over top.
