    Question Best way to cook boneless chicken breast for enchiladas?

    Don't want to dry them out but want them to have some flavor. What do you do? Thanks. DH LOVES chicken or turkey enchiladas.

    I cook mine in chicken broth with onion, bay leaf, garlic, little salt, pepper. cumin, red pepper flakes. poach them .. takes about 25 min or so.. made this with my last enchilada's. flavors were awesome and NOT dry!!

    If you let them cool in the broth, they'll stay super moist!

    DD marinates hers in lime juice, olive oil, garlic and onion and, I think some soy sauce and cumin. Then cooks them on the BBQ as you would a regular chicken breast, and slices afterwards. They are wonderful!

    first of all I really like just cheese enchiladas the best--but when I do make chicken/turkey or meat enchiladas I just use leftover cooked chicken or meat. Cooked a roast chicken on Sunday and would use those leftovers. But this time made Chicken Divan instead--also often make a chicken pot pie or soup with leftovers. If didn't have leftovers would probably just cook chicken in crock pot for a few hours.

    I do mine pretty much the same way MWG does. Poach it in chicken broth with the seasonings you want and it won't be dry. You can also drain off the seasonings and use the poaching liquid in place of any water that might be in the recipe. I also let them cool in the broth too.

    I usually buy chicken breast on the bone with skin on. I rub olive oil over the skin, salt & pepper, and roast it in the oven, let it cool, take skin off and take meat off the bone. I find the chicken more flavor full , I have made the other way poaching it in liquid and often it would come out dry.
    These days, most of the time, I just buy a rotisserie grilled chicken from the store deli and use the breast meat for things like enchiladas , chicken salad etc.

    I did boil the chicken in some chicken broth with spices. Turned out really well. Three nights of enchiladas - fabulous! Thank you all for your suggestions and help - as always. I usually make them with leftovers too.
