    Default Over abundance of cucumbers

    What else beside gazpacho, canned pickles, sandwiches, tomato-cucumber salads or other salads can I do with the many cucumbers I have? I remember pickled/candied watermelon rind......would that work with cucumbers?

    I slice cucumbers and put some thin sliced onions in with them with apple cider vinegar and oil on them. You can also shred them like cabbage, put in a collander so the water can drain off and then put a dressing with some mayonaise, sour cream and what ever else for flavor you like. Salt, pepper, dill, parsley, ect. Not sure about pickling them, never tried that but google it and you might be surprised what you find.

    Have to laugh because after I asked for recipes with cucumbers I remembered this one that I had for a dip that was quite good and one I will be making with one of the many cucumbers. Thought others would enjoy it to.

    Cucumber dip - served with potato chips or cut up veggies.

    1/2 cucumber, peeled and finely chopped
    4 slices of bacon, fried until crisp and crumbled
    1/2 tsp Worchestershire sauce
    1 pint sour cream
    2 Tbsp parsley, chopped
    2 Tsp. lemon juice
    1 pkg. dry Italian salad dressing (Good Seasons)
    1 small onion, minced

    Mix all together. Great and refreshing dip!

    I have been making cucumber cream cheese spread for bagels and crackers

    1 brick cream cheese (softened) 1 T mayo, 1 t garlic powder, small grated onion (i omit), dill (to taste) mixed together til smooth, then add diced cucumbers. Chill at least a few hours before serving.

    Do a search for clausen clone pickles. My recipe is MIA but you fill an ice cream bucked with cucumbers and brine and refrigerate them for a few weeks, they are really good. Plus no canning required so it's easy. They are supposed to last up to a year in the refrigerator but they don't in my house.

    I have a recipe for refrigerator pickles too. They are slightly sweet--more like bread and butter. I will post it if you are interested. But if you are 'pickled out', be a generous neighbour, or offer them to a food bank or senior's home.

    We like to cut them in half, seed them and then stuff them with bread crumbs or stuffing mix and some shredded cheese. Pop in the oven (350) until tender and stuffing is golden.

    as any of you know you follow my blogs here, I love chilled cucumber soup. Its easy to make and lasts awhile in frig. Have some in my frig right now that I made again yesterday. Also on foodgawker or tastespotting a week or so ago I saw some appetizers where you cut the cucumber in thick slices, hollow out part of insides and stuff with crab. They look really cute--found the recipe but not the picture, will try to locate and post it later!

    SPICY CRAB CUCUMBER CUPS
    3 long cucumbers—peeled
    cup sour cream
    cup cream cheese, softened
    cup crab (excess water removed)
    1 teas Tabasco
    Salt and pepper
    1 teas brown mustard
    1 tab minced green onion

    Cut cucumbers in 2 inch slices using small melon baller. Scoop
    Out most of insides—leave thick portion of bottom intact. Combine rest and fill. Refrigerate but serve within 2 hours.
    #can also use shrimp with mayo, green onion, Dijon and fresh dill.

    CHILLED CUCUMBER SOUP
    ---1 large cucumber
    1 small onion. fine diced
    1 garlic clove, crushed
    15 oz yogurt—natural
    2-3 tab cream
    1 tab red wine vinegar
    Salt & Pepper
    Put chunks, garlic and 1/3 yogurt in food processor. Blend,
    then add cream. Add vinegar and chill.
    SESAME CHCUMBERS
    1 large cucumber—peeled and thinly sliced
    onion
    3 tab oil
    1 teas sesame oil
    1 teas sugar
    4 tab seasoned rice vinegar
    Pnch crush red pepper flakes
    Fresh chopped cilantro (optional)

    Place cucumbers in bowl, toss with sliced onions. Mix oil,
    Sesame oil sugar, rice, vinegar and pinch of crushed red pepper.
    Drizzle over cucumbers and onions, garnish with cilantro.
    #I usually add sesame seeds, black sesame seeds too for color!

    BLACK ANGUS CUCUMBER SALAD DRESSING
    1 cup grated cucumber
    cup onion
    1 teas Worcestershire
    1 dash Tabasco
    2/3 cup mayonnaise
    1/3 cup sour cream
    teas salt, dash pepper
    1 teas white vinegar
    teas garlic powder
    1 teas sugar
    Blend with mixer on low 10 min. Refrigerate overnight.
    #I would add some dill, maybe chives and lemon juice.
    ##other recipes add crumbled feta too!
    ##oh forgot--can't cut and paste pictures on this site so go to tastespotting.com and type in cucumber rolls and you will see several pictures!

    Actually there are even better pics and recipes on foodgawker.com--just type in cucumbers and see lots of options, several pics and recipes of those cucumber cup rolls--just found a new one that uses spinach dip as the centers--going to try that one too!
