Preheat oven to 425 degrees.<br />

Cut potatoes into 1-1&amp;1/2&quot; chunks &amp; place them in a large saucepan,preferably w/2 handles.Cover w/water by 1&quot; &amp; add 1T.salt.Cover &amp; bring water to a boil.Uncover,lower heat &amp; simmer 10 minutes.Drain water,leaving potatoes in the pot.(Potatoes will have started cooking on the outside but will be hard inside.)Using a kitchen towel,grasp the pot w/the lid on &amp; shake potatoes vigorously for a full 5 seconds to rough up the edges.<br />

Meanwhile,5 minutes before the potatoes are cooked,place the pancetta on a sheet pan &amp; roast for 5 minutes.Add the drained potatoes,olive oil,1 tsp.salt &amp; 1/2 tsp.pepper to the pan &amp; toss w/a metal spatula.Roast for 45 minutes,tossing occasionally,till they are very browned &amp; crisp.Dont worry if the skins come off---that's part of the crispiness.Sprinkle w/parsley,salt &amp; pepper.Serve hot.<!-- google_ad_section_end --></div>

Preheat oven to 350 degrees.Arrange 3 oven racks evenly spaced in the oven.<br />

Lay each kale leaf on a board &amp; w/a sharp small knife,cut out the hard stem.Tear large leaves in half.Place kale in a large bowl of water &amp; wash it well.Drain the kale &amp; dry it in a salad spinner.Dry the bowl &amp; put kale back in the bowl.<br />

Toss the kale w/the olive oil,1 tsp.kosher salt &amp; 1/2 tsp.pepper.Divide kale among 3 sheet pans or roast them in batches.If you put too much kale in one pan,it will steam rather than roast &amp; will never become crisp.Roast for 15 minutes,till crisp.Sprinkle w/fleur de sel &amp; serve hot.<!-- google_ad_section_end --></div>

Ingredients:<br />

 1 pound ground coffee (a good, rich roast)<br />
Half-and-half (healthy splash per serving)<br />
Sweetened condensed milk (2 to 3 tablespoons per serving)<br />

 Directions:<br />
Cook's Note: Can use skim milk, 2-percent milk, whole milk, sugar, artificial sweeteners, syrups...adapt to your liking!<br />
<br />
In a large container, mix the ground coffee with 8 quarts water. Cover and allow to sit at room temperature for eight hours or overnight.<br />
Line a fine mesh strainer with cheesecloth and set over a pitcher or other container. Pour the coffee/water mixture through the strainer, allowing all the liquid to run through. Discard the grounds. Place the coffee liquid in the fridge and allow to cool. Use as needed.<br />
<br />
To make iced coffee, pack a glass full of ice cubes. Fill the glass two-thirds full with the coffee liquid. Add a healthy splash of half-and-half. Add 2 to 3 tablespoons sweetened condensed milk (can use plain sugar instead) and stir to combine. Taste and adjust the half-and-half and/or sweetened condensed milk as needed.<!-- google_ad_section_end --></div>

1 tsp.dried thyme  <br />
kosher salt &amp; freshly ground black pepper<br />
3 large garlic cloves,peeled<br />
1/3 c.chopped fresh flat-leaf parsley <br />
2 c.coarse bread cubes from a country bread (Crusts removed)<br />

Preheat oven to 400 degrees.<br />
<br />
Place tomatoes in a 9&quot;x13&quot; ceramic(Or nonreactive)dish.Add the 1&amp;1/2 T.of olive oil,thyme,1 tsp.salt,1/2 tsp.pepper &amp; toss together.Spread tomatoes evenly in the dish.<br />
<br />
Place garlic,parsley &amp; 1/2 tsp.salt in the bowl of a food processer fitted w/the steel blade &amp; process till finely chopped.Add bread cubes &amp; process till crumbly.Add 1/4 c.olive oil &amp; pulse a few times to blend.Sprinkle crumbs evenly over the tomatoes.<br />
<br />
Bake gratin for 40-45 minutes,till crumbs are golden &amp; tomato juices are bubbly.Serve hot or warm.<!-- google_ad_section_end --></div>

Chicken in Creamy Sun Dried Tomato Sauce<br />
 <br />
Mediterranean flavors such as sun-dried tomatoes, kalamata olives, capers, artichoke hearts, tomatoes and white wine simmer together to flavor chicken breasts in this mouthwatering slow-cooker dish.<br />
<br />
Servings:8<br />
<br />
Ingredients<br />
<br />
 	2 cans (10 3/4 ounces each) Campbell's® Condensed Cream of Chicken with Herbs Soup or Campbell's® Condensed Cream of Chicken Soup<br />
 	1 cup Chablis or other dry white wine * (I used dry Vermouth)<br />
 	1/4 cup coarsely chopped pitted kalamata or oil-cured olive<br />
 	2 tbsp. drained capers<br />
 	2 cloves garlic , minced<br />
 	1 can (14 ounces) artichoke heart , drained and chopped<br />
 	1 cup drained and coarsely chopped sun-dried tomatoes<br />
 	8 skinless, boneless chicken breasts halves (about 2 pounds) (I cut mine in large chunks)<br />
 	1/2 cup chopped fresh basil leaves (optional)<br />
 	Hot cooked rice , egg noodles or mashed potatoes<br />
 	<br />
Directions<br />
<br />
Stir the soup, wine, olives, capers, garlic, artichokes and tomatoes in a 3 1/2-quart slow cooker. Add the chicken and turn to coat.<br />
Cover and cook on LOW for 7 to 8 hours** or until the chicken is cooked through. Sprinkle with the basil, if desired. Serve with the rice.<br />
*You can substitute Swanson® Chicken Broth for the wine, if desired.<br />

** Or on HIGH for 4 to 5 hours<br />

Charlene’s notes:  This was excellent!  The only thing I would change would be to use chicken thighs instead of breasts.  I cut the chicken breasts into large chunks and put them in the sauce to cook.  I think it needed salt and I put some fresh squeezed lemon juice on mine.<!-- google_ad_section_end --></div>

Moroccan Style Lamb and Chickpeas<br />

•	Yield: Serves 4 (serving size: 1  1/4 cups)<br />
<br />
Ingredients<br />
<br />
•	1 pound lean ground lamb <br />
•	2 teaspoons extra-virgin olive oil <br />
•	2 cups vertically sliced onion <br />
•	1/2 cup (1/4-inch) diagonally cut carrot <br />
•	3/4 teaspoon ground cumin <br />
•	3/4 teaspoon ground cinnamon <br />
•	1/2 teaspoon ground coriander <br />
•	1/4 teaspoon ground red pepper <br />
•	2 cups fat-free, lower-sodium chicken broth <br />
•	1/2 cup golden raisins <br />
•	3 tablespoons tomato paste <br />
•	1 1/2 tablespoons grated lemon rind <br />
•	1/4 teaspoon salt <br />
•	1 (15 1/2-ounce can) chickpeas (garbanzo beans), rinsed and drained <br />
•	1/2 cup chopped fresh cilantro <br />
•	1 tablespoon fresh lemon juice <br />

Preparation<br />
<br />
1.	Heat a large nonstick skillet over medium-high heat. Add lamb to pan; cook 6 minutes, stirring to crumble. Remove lamb from pan with a slotted spoon. Discard drippings. Add oil to pan; swirl to coat. Add onion and carrot to pan; sauté 4 minutes. Add cumin, cinnamon, coriander, and pepper; sauté 30 seconds, stirring constantly. Add reserved lamb, broth, and next 5 ingredients (through chickpeas); bring to a boil. Reduce heat, and simmer 4 minutes or until mixture thickens. Remove from heat. Had a mixture of broccoli, carrots and green beans, cooked it all up in micro, put a couple plops of butter over top, sprinkled on a vegetable seasoning mix (like Mrs Dash) tossed it around to coat, then grated on old cheddar cheese. Sooooo delicious. I don't think I'll bother with making a cheese sauce ever again.<!-- google_ad_section_end --></div>
