    Cool Taco Cabana Dessert

    Help Me! My husband and I are both addicted to the little cake dessert that they sell at Taco Cabana. Not only do we not know what it's called, I can't find a recipe for this cake that is so juicy that 1 isn't enough.

    Help please.....

    Chocolate Cajeta Cake - cake with chocolate caramel syrup

    Tres Leches Cake

    INGREDIENTS:

    * 1 1/4 cup cake flour
    * 1 teaspoon baking powder
    * 1 cup sugar
    * 1/3 cup oil
    * 5 eggs, large
    * 1 teaspoon plus 1 teaspoon vanilla extract
    * 1 cup plus 1/2 cup milk
    * 1 cup sweetened condensed milk
    * 1 cup plus 3/4 cup heavy cream
    * 1 tablespoon rum
    * 1 pinch salt

    PREPARATION:
    Combine flour and baking powder and salt. In a separate bowl, combine the oil, sugar, and 1 teaspoon vanilla extract. Add the eggs to the sugar mixture one at a time until well combined. Stir in the 1/2 cup of milk, then gently fold in the flour mixture a little at a time.

    Pour batter into a lightly greased cake pan or baking dish and bake at 325 degrees for 30-40 minutes or until it feels firm and an inserted toothpick comes out clean.

    Let the cake cool until room temperature.

    Mexican Chocolate Cake

    Recipe Ingredients:

    2 cups graham cracker crushed
    1 cup pecans, finely chopped
    1/2 cup butter or margarine melted
    2 cups milk
    1 pkg chocolate pudding (3 5/8 oz.)
    1 circular tablet Mexican chocolate
    1 pkg cream cheese (8 oz.)
    whole pecans for garnish
    Recipe Instructions:

    Combine graham crackers and nuts. Set one cup of mixture aside. to remaining mix, add melted butter and press into 9 inch pie pan. Heat milk and Mexican chocolate over low heat. Add pudding and stir occasionally until thickened. Add softened cream cheese to pudding and stir until melted. Pour contents into pie pan.
    Cool. Refrigerate several hours before serving. Garnish with reserved nuts and crumbs around edge of pie. Decorate with pecans.

    Oh man they have the best taco salad with hamburger meat too. Will have to try the desserts.
