    Default Recipe for Maifun (Rice Sticks) noodles...

    I'm looking for a tried & true recipe for preparing the Maifun noodles the same way they do in the Chinese retaurants. I love how they make them in the restaurant and can't get enough of them...would like to make some at home too.

    Other names for this noodle are: Mei Fun, Long Rice, Rice Vermicelli Noodles.

    The way the Chinese restaurant makes it, it's vegetarian with some egg in it.

    Default I think I found it!!!

    After searching around, I think I finally found a recipe like what they serve in our local Chinese Buffet...

    Serves 4 to 6 as part of a multicourse meal.
    Quick Chinese-Style Vermicelli (Rice Noodles)

    1. 1 (8 ounce) package dried rice noodles
    2. 2 tablespoons vegetable oil
    3. 1 clove garlic, minced
    4. 1 tablespoon soy sauce
    5. 1/2 tablespoon chili sauce
    6. salt and pepper to taste
    7. 1 green onion, chopped / Celery (Opt) / Egg beaters

    1. Bring a large pot of water to a boil. Add rice noodles, and cook for 4 to 5 minutes or until al dente; drain.
    2. Heat oil in a large skillet over medium heat. Sauté garlic and celery until tender. Stir in noodles, and season with soy sauce, chili sauce, salt and pepper. Sprinkle top with chopped green onion.
    Yield: 4 servings
