    This is a recipe I created last spring when my neighbor brought me a bunch of spring peas. I think you could adapt it using the specific ingredients mentioned above.
    I didn't use sugar, I didn't feel it would add anything and I don't care for sweet dressing. If you do go easy and add as you go.
    I hope you like it, I thought it was awesome!

    Spring Pea Salad

    2 C fresh spring peas, can use frozen
    1/4 C red onion, diced (any sweet onion will do)
    3 oz. sharp cheddar cheese cubed
    6-8 slices bacon, cooked until crispy & chopped
    1 stalk celery, sliced
    Mayo, enough to lightly coat
    Sea salt & fresh ground pepper to taste

    Add peas to boiling water, simmer 1 minute, drain, cool under cold water.
    Cook bacon and set aside.
    Add all other ingredients together, add to cool peas. refrigerate. Add bacon before serving.
