    CHOCOLATE ITALIAN CAKE
    WITH CHOCOLATE CREAM CHEESE FROSTING
    Source: Southern Living Magazine, November 2002
    Makes 10 to 12 servings

    This wonderful cake is a chocolate version of the classic Italian Cream Cake.

    5 large eggs, separated
    1/2 cup butter, softened
    1/2 cup shortening
    2 cups sugar
    2 1/4 cups all-purpose flour
    1/4 cup unsweetened cocoa
    1 teaspoon baking soda
    1 cup buttermilk
    1 cup sweetened flaked coconut
    2/3 cup finely chopped pecans
    2 teaspoons vanilla extract
    Chocolate-Cream Cheese Frosting (recipe follows)
    pecan halves (for garnish)

    Preheat oven to 325 degrees F. Grease and flour 3 (8-inch) round cake pans.

    Beat egg whites at high speed with an electric mixer until stiff peaks form;
    set aside.

    Beat butter and shortening until creamy; gradually add sugar, beating well.
    Add egg yolks, 1 at a time, beating until blended after each addition.

    Combine flour, cocoa, and baking soda; add to butter mixture alternately
    with buttermilk, beginning and ending with flour mixture. Beat at low speed
    until blended after each addition.

    Stir in coconut, chopped pecans, and vanilla. Fold in egg whites. Pour
    batter into prepared pans.

    Bake at 325 degrees F for 25 to 30 minutes or until a wooden pick
    inserted in center comes out clean. Cool in pans 10 minutes.
    Remove cake layers to wire racks, and cool completely.

    Spread Chocolate-Cream Cheese Frosting between layers and on top
    and sides of cake. Garnish, if desired.

    CHOCOLATE-CREAM CHEESE FROSTING:

    1 (8-ounce) package cream cheese, softened
    1/2 cup butter, softened
    2 teaspoons vanilla extract
    1/4 teaspoon ground cinnamon
    1 (16-ounce) package powdered sugar
    1/4 cup unsweetened cocoa
    1/4 cup buttermilk
    2/3 cup finely chopped pecans

    Beat together cream cheese, butter, vanilla, and cinnamon at
    medium speed with an electric mixer until creamy. Combine powdered s
    ugar and cocoa; gradually add to butter mixture alternately with buttermilk,
    beginning and ending with powdered sugar mixture. Beat at low speed until b
    lended after each addition. Stir in pecans. Makes 4 cups

    Oooh, I very much like the idea of the chocolate w/the coconut. Thanks for posting this. The non-chocolate version is one of my favorite cakes.

    Yummy!!!! Hubby's birthday is coming up. Since he loves chocolate I think this will be a great cake to surprise him with. Thank you so much for posting this recipe. I'll let you know how it turns out!

    Italian Chocolate Cake - menu description

    Rich and flavorful chocolate cake topped with a sweet chocolate icing, toffee and almonds. Served with vanilla ice cream

    Maybe you could experiment with this recipe.

    ITALIAN CHOCOLATE CAKE
    Source: Cooks.com

    3/4 c. butter
    2 c. sugar
    3 eggs
    1 tsp. vanilla
    2 3/4 c. flour (sift before measuring)
    1 1/2 tsp. soda
    1/2 tsp. salt
    3/4 c. water
    1 c. chocolate ice cream (measure and set aside to melt)
    2 oz. semi-sweet chocolate
    1 tbsp. butter
    2 tbsp. water

    For cake cream together butter and sugar, adding eggs, one at a time, beat after each addition until light and fluffy. Add vanilla. Sift flour, soda and salt and add alternately with the 3/4 cup water until smooth. Add ice cream and beat one minute. Over boiling water melt the chocolate with 1 tablespoon butter and 2 tablespoons water. Pour into 3 greased and floured 9 inch cake pans.
    Spoon thee melted chocolate carefully over the top of three layers. With spatula, swirl the chocolate through so some will marble into the batter and some will remain on top. Bake at 350 degrees for 30 minutes. Cool and frost.


    ICING:

    4 c. powdered sugar
    1/2 c. plus 1 tbsp. sour cream
    3 oz. melted semi-sweet chocolate
    1 tbsp. butter

    Beat all together until light and spreadable. Reserve 2 tablespoons of melted chocolate. Keep it over hot water until cake is iced. Spread icing on cake layers, then use reserved chocolate for garnish.

    I went to his site and according to the site they no longer call it
    Johnny Carino, he doesn't own it anymore.

    I could have remembered that wrong.

    If he doesn't I wander what the name is now.
