    Question Village inn pancake recipe

    The only specific/unique ingredients I know they use are cake flour & cottonseed oil.
    Please help!!!!

    I found this on Recipe Link, posted by Joanne. Hope it helps.

    I have used this pancake recipe for many years. Even though it didnot come directly from from Village Inn. I think the original came from a restaurant in Western Kansas.

    Village Inn Pancakes

    Place in blender:
    1 c buttermilk
    1 egg
    1 1/2 tbsp salad oil (or melted butter)
    1 1/2 tbsp sugar
    Blend a few seconds. Add dry ingredients:
    1 c flour
    1 1/2 tsp baking powder
    1/4 tsp soda
    1/2 tsp salt
    Pour into liquid in blender. Pulse blend, scraping down sides for a
    few seconds. Pour onto hot griddle (375 - 400 deg). Turn when tops
    are full of bubbles.
    (Milk can be substituted instead of buttermilk. Omit soda)

    I will let you know how/if the cottonseed oil and cake flour changes the flavor!
