    Default Best way to cook carrots

    I'm embarrased to say that I have never cooked fresh carrots, except in stews and soups. My SIL gave me some fresh carrots and I don't know what to do with them. How do you cook your carrots?

    I either nuke or boil them (like a potato) then add butter & salt - nothing simpler.

    i've sliced silver dollar style and simmered til they were crisp tender. then in small saucepan I take butter, ginger, little orange juice and thicken it with some corn starch til syrupy . then mix in the carrots. its called sunshine carrots. out of the old better homes and gardens cookbook..

    i have two different ways i do them depending on what i want at the time, always boil them til almost done, cool and slice them, then saute them in a little butter with basil and onion. I call these savory carrots. Then I worked at a restaurant that sauted them in butter with a serious coating of sugar til browned, really sweet but good.

    I cook, sliced, till tender, then season with butter & sugar, as my grandmother & mother did.

    I've been making these for years, and my grown kids still think they're a treat. The recipe is from an old Betty Crocker "Cooking With Wine" cookbook. The cutting of the carrots takes some time, but is worth the effort. The rest is easy!

    Glazed Carrots

    2 Tblsp. butter or margarine
    1/2 lb. of carrots, cut into julienne strips ( first cut into 3-4" lengths, then julienne as
    small as possible -- about 1/8" x 1/8")
    1/2 cup white wine (or dry vermouth) Sometimes I add a generous splash of Triple Sec
    1/2 cup water
    1 Tblsp. sugar
    salt to taste

    Melt butter in skillet; spread carrots in pan with rest of ingredients. Heat to boiling. Reduce heat and simmer until carrots are very tender (uncovered) and only butter/sugar mixture remains, about 40 minutes.

    I'm not careful about watching the time; these carrots are hard to "overcook" as long as you stir once in a while to check to see that they are not starting to turn brown.

    Slice them about 1/4" thick and steam or boil them until tender then put a cheese sauce over them. I tried these at a dinner (not really expecting to like them) and they were delicious. It was just a cheese sauce like what is served on broccoli.

    I Don't Like Cooked Carrots, I Love Raw Ones. But I'll Make Them For Dh And The Kids. I'll Either Use Whole "baby" Carrots, Or Slice Whole Ones, Put Just A Tad Of Water, And A Bunch Of Butter And Brown Sugar, And Cook Until I Can Cut One Easily. They Love Them.

    I got this recipe years ago from the TSR board, and it's still my favorite way to cook carrots.

    Sparkling Carrots

    1 small onion chopped
    2 Tbs. butter or margarine
    1 1/2 pound carrots, sliced 1/8 inch thick
    1 cup lemon-lime carbonated beverage
    salt and pepper to taste
    1 Tbs. sugar

    Saute onion in butter in large saucepan. Add carrots and carbonated beverage. Season to taste with salt and
    pepper. Add sugar and cook over high heat until liquid is absorbed and carrots are slightly glazed, about 8 to
    10 minutes.
