I am excited to have an herb garden this year. I was hoping you all would share your favorite recipe(s) using fresh herbs?? Also, if anyone would have any experience with drying herbs I'd appreciate info as to what's the best method you have found.

Roasted Chicken with Rosemary
We had this in Switzerland over 20 years ago and copied it
1 Roasting Chicken
1 large bunch of fresh Rosemary I trim off a big hand full to fill up the cavity
1 lemon
salt
pepper
granulated garlic
Heat oven to 350
Rinse and dry chicken inside and out
stuff Rosemary into chicken cavity
cut lemon in half and squeeze over chicken
coat liberally with salt, garlic and pepper
I place on rack in roasting pan spray rack with cooking spray. I place chicken breast side down for 30 minutes, then turn chicken and roast till done. I do baste after I turn the chicken.
It's simple but tastes great.

Tomato Basil Pie
1 pie crust
5 tomatoes
1 1/2 cups shredded mozzarella cheese, divided
1 cup fresh basil, chopped plus more for optional garnish
4 garlic cloves, chopped
1/3 cup mayonnaise (not miricle whip)
1/4 cup parmesan cheese
salt
pepper
Preheat oven to 400.
Seed and chop tomatoes and let them drain. When drained, mix in chopped garlic and basil
Bake pie crust for 10 minutes. As soon as it comes out of the oven, sprinkle 1/2 of the mozzarella in it.
Reduce oven temp to 375*.
Pile up tomato mixture in crust.
Mix together remaining 3/4 cup mozerella,mayo, parmesan, salt and pepper to taste then spoon on top of tomato mixture and spread around. It doesn't have to cover all tomatoes or go to the edge of the crust.
Bake for 20-25 minutes or until edges are brown and cheese is bubbly.
If necessary, shield edges of crust with foil to prevent burning.
Serve hot or at room temperature.

Jacki - I haven't tried the rosemary in the chicken but I have used the lemon juice - I then throw the rest of the lemon into the cavity
I often put the rest on the lemon in the cavity as well. This chicken is so flavorful and has nice crisp skin. We are actually having this for dinner since we didn't marinate the Bloody Mary Flank Steak but I will try it in my new roaster that has an arm to hold up the chicken.
