Slice the tomatoes into thick slices. Salt and pepper them (I use garlic salt). Dip in flour, shake off excess. Dip in beaten eggs, then in plain yellow cornmeal. Let them rest on a cookie sheet in the fridge for about 10 min so the coating dosent come off. Them fry in about 1 inch hot oil for several min untill done. About 3 min per side depending on thinckness.
Do Them Like You'd Do Your Squash.
We Prefere Thin Slices, And I Dredge Them In Seasoned Flour, And Fry Until Golden Brown And Crispy. I Don't Care For Alot Of Batter On Them.

Ok, this is what I did since I didn't have any corn meal:
Sliced the tomatoes thin and seasonsed
2 beaten eggs (beatened and seasoned)
Flour and seasoned italian bread crumbs
Dipped in egg wash and flour mixture.
Fried to a dark golden brown.
In oven now drizzled with Parm. shavings.
Now waiting for DH to do the taste test.
