    If anyone here has ever been to bajio and had the burrito classico you know what i mean when i say that it is the best food ever made by anyone. i love it so much i quite literally eat there everyday but it is burning a hole in my wallet at almost 9$ a meal i figure i might as well try and make it myself. so i guess what i know how to do already is, make mexican rice, cook a tortilla make all 3 kinds of beans beans but what i dont know how to do is make the little cubed lime chicken they have and how to make the red sauce this is the part i NEED TO KNOW the red sauce with the lime chicken is soooo good. any help would be great ! thank you

    Bajio Chicken

    5 chicken breasts
    1/2 cup salsa
    1 Tbsp cumin
    1/2 cup brown sugar (more to taste, I added at least an extra 1/8 cup)
    1 4 oz. can diced green chilies
    6 oz. Sprite (1/2 can)

    Combine all ingredients in a crock pot. Cook on low for 5-6 hours. Remove chicken and shred. Return to crock pot and cook 1 more hour. Thicken the juices with a little cornstarch mixed in water.
    Serve with flour tortillas, lettuce, cheese, black beans and any other taco fixings.
    If you want it spicier rather than sweeter add a hotter salsa and more green chilies.

    maybe you could use this for the chicken recipe

    Mesquite Lime Chicken

    Makes 6 servings.

    Prep Time: 5 minutes

    Cook Time: 16 minutes

    Refrigerate Time: 15 minutes

    1/4 cup fresh lime juice

    3 tablespoons McCormick® Grill Mates® Mesquite Seasoning

    2 tablespoons vegetable oil

    2 tablespoons honey

    1 1/2 pounds boneless skinless chicken breast halves

    1. Mix lime juice, Mesquite Seasoning, oil and honey in small bowl. Place chicken in large resealable plastic bag or glass dish. Add marinade; turn to coat well.

    2. Refrigerate 15 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade.

    3. Grill over medium heat 6 to 8 minutes per side or until chicken is cooked through, turning frequently.
