    Default question about stuffed peppers

    I was going to make stuffed peppers in my crockpot tomorrow and wanted to try barely instead of rice. I only have regular barely (not the quick kind). Do I have to cook it first? I'm going to cook the peppers on low for 8 hrs. Thanks to anyone who replys!!

    I would cook the barley 1/2 way. let us know how it is. Interesting change.hummmm

    My mom used to sneak in barley in her chicken and rice soup! Never knew it until I was older and saw the bag! Same thing with cottage cheese, never knew she put that in lasagna either. Sneaky gal!!!

    You would not harm the barley by cooking it all the way and them mixing it with your meat. I now buy the Uncle Ben flavored rice in the pouch that just take 90 seconds in the microwave. I mix that with my meat and other ingredients, cut my peppers in half, deseed them, fill them with the meat/rice mixture and bake for 30 minutes. I also add a can of tomato soup mixed with one can water and pour that around the peppers too - yummy and makes a tasty sauce.

    I actually opted to use quick cook couscous because I found some in the cupboard and didn't have time to play around this morning. Turned out very good. It gave the stuffed peppers more "bulk" without the grainy texture that i object to with the rice. I'll go for the barely next time when I have the quick kind on hand.

    I have never seen "Quick Cook Barley".

    They have it at my giaint eagle right next to the regular barely. If I remember correctly it cooks in like ten mins.

    I wouldn't cook it at all first. Remember to add enough liquid as barley soaks up a lot. I love stuffed peppers in the crock

    Let the pearl barley cook with everything from the beginning -adds great flavor -just remember it swells so have enough liquid.
