    Default Stuffed Pepper Soup

    Hello everyone. I was wondering if someone has or know where I can get a Stuffed Pepper Soup recipe. I tried that for the first time in school for lunch and it was UNBELIEVABLY good!!! TIA!!

    Stuffed Pepper Stoup
    Serves 4


    Ingredients•2 tablespoons extra virgin olive oil (EVOO)
    •1 1/2 pounds ground beef sirloin
    •Salt and black pepper
    •1/2 teaspoon allspice (eyeball it)
    •4 cloves garlic, chopped
    •1 large onion, cut into bite-size dice
    •3 green bell peppers, seeded and cut into bite-size dice
    •1 bay leaf
    •1 quart chicken stock
    •1 can crushed tomatoes (28 ounces)
    •1 cup orzo pasta
    •12-15 basil leaves, shredded or torn
    •Grated Parmigiano Reggiano, to pass at table
    PreparationHeat a medium soup pot over medium-high heat with the EVOO. When the EVOO is hot, add beef and season with salt, black pepper and allspice. Brown the meat for 5 minutes then add garlic, onion, peppers and bay leaf and cook for 7-8 minutes, until tender.

    Stir in stock and tomatoes and bring to a boil. Add pasta and cook to al dente, 7-8 minutes. Turn off heat. Fold in basil.

    Serve in shallow bowls with grated cheese.

    Stuffed Pepper Soup Hj’s

    2 lbs. gr. sirloin break up fine starting -COLD water like Taco Bell meat
    1) 15 oz. can Hunt’s tomato sauce
    1) 28 oz. can Hunt’s diced tomatoes undrained
    2 c. green pepper seeded chopped
    1 large onion chop
    2 garlic cloves mince or little more
    2 beef bouillon cubes or use A JUS paste to taste
    1 tsp. Italian Seasonings or little more to taste
    ½ tsp. dried sweet basil
    salt ñ pepper to taste
    3 c. water (more or less depending on how thick you like it
    ¼ c. romano grated cheese

    2 c. rice cooked (white or brown

    Garnish with mozzarella cheese ñ romano cheese on the side
    Touch of red crushed pepper flakes either in the soup or place on the table. YUM Get out the crusty warm Italian bread buttered.

    Garnish with more romano grated cheese ñ mozzarella grated cheese

    Break meat up in cold water with hands – enough just to cover in large pot.
    Add all remaining ingredients EXCEPT Rice ñ Mozzarella -bring everything to boil. Reduce heat- cover -simmer – ñ stir often 30 to 40 minutes or until peppers are tender ñ thickness desired . Add cooked rice last with . Freezes well also.

    Note~ if want thicker add little tomato paste from the tube.

    1 lb ground beef
    1 envelope dry onion soup mix
    1 can (14.5 ounces) diced tomatoes
    1 can (15 ounces) tomato sauce
    1 cup cooked white rice
    2 large green bell peppers, chopped
    1 beef bouillon cube
    1/8 cup packed brown sugar
    2 tablespoons apple cider vinegar
    1 1/4 cups water
    mozzarella cheese for finishing (optional)

    In a large pot, brown beef thoroughly. Drain grease and return to pot. - Stir in dry soup mix and heat thoroughly.

    Add remaining ingredients (except rice) and bring to a boil. Reduce heat and simmer for 30-40 minutes or until peppers are soft. Add rice and heat through.

    Scoop into bowls and sprinkle with mozzarella cheese.

    Makes 5 servings.

    My recipe is different so I thought I would post it too. There is never any leftover but it does freeze well if you can get people to leave some lol.

    2 1/2 - 3 lb ground meat
    3 medium onions - diced
    2 cans tomato sauce
    1 can water
    2 C water + 3 T beef bullion (heat and disolve)
    1 can diced tomatoes
    1 can diced tomatoes with green chilis
    1 lg yellow pepper - diced
    2 lg red pepper - diced
    2 lg green pepper - diced
    2 hot peppers - diced
    3 cloves fresh garlic minced
    1+ cup barley

    Brown ground meat and onions. Add all ingreidients to crockpot and cook on low 8 hrs. Added water to obtain desired thickness while cooking.
