    Default Apple Tapioca

    I doubt anyone will be able to help me but here goes. When I was a kid my mother used to make a pan (about 9 x 13) of apple tapioca. It had slices of apple in it covered or incorporated in it with a clearish tapioca pudding mixture that had cinnamon mixed in it so although it was clear it also had an amberish color to it. I want to say that it was made with regular tapioca and not minute tapioca of a box of tapioca pudding that is creamy. This was about 50 years ago. Anyone have a guess how this might be made or where I might begin to search for this recipe. It was so delicious and us kids would fight over it. Thanks for any help you can give me.

    Wow they both sound good. Definitely make both for sure. Would like your thoughts on an idea I had......Could I substitute apple juice or cider for the water component? Thinking that this would make it more appley tasting or no? Maybe that would be overkill.

    I think the one from Taste of Home sounds better than the other one because it mixes the brown sugar, etc. with the tapioca while it is cooking. The other one just cooks the tapioca with the water so all of the good taste is under it when it is poured over the apples.

    I think using apple juice might be a little overkill. Maybe substitute just part of the water to start with and then go from there.
