    Question O'Carrs Chicken Salad

    Does anyone have the recipe or a similar recipe for O'Carrs Chicken Salad? O'Carrs is deli in Homewood, AL.

    Can't locate their recipe, but did find they serve between 1,000 and 2,000 pounds of it per week. That's a lot of chicken salad for a 50 seat place. Must be wonderful. Can you further describe the dish? I'll keep looking and posting to other sites. I love doing searches.

    I LOVE O'Carr's chicken salad and miss it so much since leaving Birmingham! It is shredded chicken, red grapes, and walnuts (I think) in a mayo based dressing. Huge portions served with crackers and fresh seasonal fruit!

    I think I will take my best chicken salad recipe, shred the chicken and not cut into small chunks, add the red grapes and walnuts (probably candied) and serve with seasonal fruit. I prepare the chicken by poaching in water with carots, onions, celery and seasoning - then drain and when cool enough to handle, remove the skin and the bones from the chicken breasts and then cut into small chunks (now will try shredding it). I only use Hellman's mayonaaise or on the West Coast - Best Foods (same manufacturer).

    Thats a good recipe I know I will try it as for the cherries are they candied ?

    No cherries. Grapes and candied walnuts. Here is my original chicken salad recipe which I will incorporate the new items into:

    Miss Ada was my boss's maid and cook - I had the pleasure of meeting her when my boss (Sister Mary Elizabeth Anne) and I traveled on business to San Diego, CA back in the eary 80's she was up in age then. My boss is now 75 so I would say this recipe is from the late 30's or eary 40's:

    MISS ADA'S CHICKEN SALAD

    Serving Size : 6 Preparation Time :0:45
    Categories : A Cold/Damp Night Idea Chicken
    Chicken Salad Poultry
    Salads T. Shunick Recipe/Collection

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 Whole chicken breast -- split
    1 medium onion -- quartered
    1 large carrot + one stalk of celery with leaves. -- quartered
    2 teaspoons salt
    1 teaspoon peppercorns
    2 teaspoons celery seed
    3/4 cup mayonnaise (you may need a little more)
    1/2 cup celery -- sliced thin
    salt and pepper -- to taste

    Place chicken in pot; cover with water, add the carrot, celery stalk, 2 teasp. salt, 1 teasp. peppercorns, 1 tsp. celery seed and the onion. Bring to a boil and simmer about 45 minutes or until the chicken is tender and about to fall off the bone. Remove the chicken to a platter and cool. (you can remove the vegetables from the stock and store the stock for another use). Remove the skin and the bones from the chicken and cut into small pieces. Put chicken into bowl, add the remaining ingredients including the last of the celery seed. Mix well, adding more mayonnaise as needed. Refrigerate for several hours before serving.

    Best Chicken Salad

    Meat of 1 rotisserie chicken, chopped
    or 4-6 chicken breasts, cooked & chopped
    1 c chopped celery
    4 boiled eggs, chopped
    2 tart apples, chopped
    1 c toasted pecans, chopped
    1/2 c grapes, halved
    Mayonaise
    salt & pepper
    1 tsp. curry powder

    Mix ingredients tog. with enough mayo to hold bind. Chill to blend flavors. **Best served on Croissants**

    I think I will use my favorite chicken salad recipe and shred the meat instead of cutting it into bite-size pieces. Add the red grapes, and use candied walnuts and serve with seasonal fruit.

    I poach my chicken in water with salt & pepper, a chunk of carrot, a stalk of celery, a quarter of an onion and other seasonins like celery leaves (dried or fresh), celery seed, etc. Then when cooked, I remove the chicken and let it cool, remove the skin and debone the breasts. And then mix with thinly sliced celery and a little diced onion. Season as desired.

    If you strain the poaching broth you have a nice chicken stock for use in other recipes. Thanks for the information. Also only use Hellmann's mayonnaise or Best Foods on the West Coast (same producer).
