I am looking for a recipe that was popular in the late '60's and early 70's. It was a jello ring made of Lime Jello and had cabbage, carrots and I think maybe onion in it. It was served with some type of dressing or mayonaise. I would appreciate help with this. It was something my mom used to make and one of the few recipes we didnt get from her before she passed away. I would like to make it for Easter dinner for the family and surprise them since we have all talked about this and no one has been able to find the recipe.

Lime Jello Cabbage Salad RECIPE BY: Pam-I-Am This Jello salad is a tradition in our family to serve with ham or pork. It has shredded cabbage and carrots in it which give it a nice crunch. My Mom always served it when I was a kid and she can't remember where she got the recipe from. My kids love it. You can make with with regular or sugar free jello. You can make with with regular or sugar free jello. 1(3ounce)box lime Jell-O gelatin(or Sugar Free) 1 cup water 1 cup water, with leftover pineapple juice 1 cup cabbage, shredded very fine 1/2 cup carrots, grated 1 cup crushed pineapple in juice, drain and save juice Directions 1Shred cabbage in food processor to be very fine and to equal 1 cup. Grate carrots to equal 1/2 cup. Add both to an 8 x 8 square dish. 2Drain crushed pineapple, reserving liquid in a measuring cup. Add ice to the juice so it will equal exactly one cup. Set aside. 3In a small pan on low heat, heat one cup water. Add jello to disolve and turn off heat. Add the pineapple juice/ice to the pan and stir until ice melts. 4Pour jello mixture into the 8 x 8 dish with the cabbage, carrots and pineapple. Refrigerate for 2 hours unti firm. 5Cut into 9 square servings and and enjoy! http://www.recipezaar.com/149284

If this isn't the one you want, let me know. I have an old Jell-O cookbook. Reminded me of holidays at my house-my Dad liked the lime jello with cabbage and olives. My kids called it the Cat Food jellO, like in Xmas Story.

No that is not it no pineapple. And I believe there were onions. I remember her soaking them in ice water to mellow them some.

Is this similar?
Vegetable Jello Salad Recipe Ingredients: 2 pkg. lemon or lime Jello 3 1/2 c. water 2 tsp. vinegar 1/2 c. salad dressing 1 c. grated carrots 1 c. chopped cabbage 1 sm. onion, chopped Salt and pepper Cooking Directions: Dissolve Jello in half hot water, then add remainder of water cold with the vinegar. Blend in salad dressing. Add vegetables. Pour in bowl or mold and chill. |

Not quite the Mayo or salad dressing was served on top of the dish after it was unmolded.

Perhaps you could amalgamate the two jello salads - take out the celery in this one and add the onion from the previous recipe and use cabbage instead of the cucumber
Molded Garden Jell-O Salad 1 package (3-ounce) lime flavored gelatin 1 package (3-ounce) lemon Jell-O 2 cups boiling water 1 1/2 cups cold water 3 tablespoons lemon juice 1 1/2 teaspoons prepared horseradish 1 cup finely chopped cucumber 1 cup shredded carrots 1/4 cup thinly sliced celery lettuce Dissolve lime and lemon gelatins or Jello in 2 cups boiling water. Add 1 1/2 cups cold water, lemon juice, and horseradish. chill until partially set. Fold in vegetables. Pour Jello salad mixture into a 5 1/2-cup ring mold. Chill Jello salad until set. Arrange lettuce on a serving plate; unmold Jello salad onto lettuce. Serve Jello salad with mayonnaise. Jello salad serves 8. |

This recipe came out of the Jell-O book from the 1960s. Not certain it is what you are looking for but it sounds close. I have copied the recipe exactly as written.
Vegetable Salad 1-3 oz. pkg. Lime Jell-O ¾ t. salt 1 c. boiling water ¾ c. cold water 2 T. vinegar 2 t. grated onion Dash of pepper ¾ c. finely chopped cabbage* ¾ c. finely chopped celery* ¼ c. finely chopped green pepper* 2 T. diced pimento* Mayonnaise, opt. *Or use any vegetable combination -- 1 to 2 c. of your favorites. Dissolve Jell-O Gelatin and salt in boiling water. Add cold water, vinegar, onion, and pepper. Chill until very thick. Then fold in vegetables. Pour into a 1- quart mold. Chill until firm. Unmold. Place small amount of mayonnaise on each serving if desired. Makes about 3 cups. |
