Default Cranberry walnut salad

Cranberry walnut salad

1-2 heads romaine lettuce
1 pint cran raisins
2 cups shredded cheese
½ cup toasted walnuts (350 oven for 7 minutes)


1 cup canola oil
1/3 cup sugar (or splenda if you are watching calories!)
½ red wine vinegar
2 cloves minced garlic
½ salt and paprika
1/4 tsp pepper


Dressing...make up beforehand refrigerate. Add to salad right before serving

I gotta to tell you...I tried this tonight and accidentally burned the walnuts , so I subbed sliced almonds (baked them) and this was so good! Not a speck of salad was left! The kids loved it too.

(I posted in tried and true because my friend swore by it and she wasn't lying!)

That looks like the winter fruit salad I make... just toss a chopped pear and an apple in there and add a tablespoon of poppy seeds to the dressing and it's the same! Delish!!

Default Cranberry walnut salad

I made two different versions of this salad during the holiday season, and this is the one we liked best. Its incredibly easy to make, pretty to serve, and delicious An original recipe.

1 small package red raspberry gelatin
1 small package black cherry gelatin
1 cup boiling water
1 can whole berry cranberry sauce
1 large can crushed pineapple, with juice
1 package plain gelatin
1 small can mandarin oranges, drained
1 cup chopped walnuts

Coat the interior of a round mold with cooking spray. Set aside.

Put flavored gelatins in a large mixing bowl. Add boiling water and stir to dissolve gelatin. Add cranberry sauce and blend well. You may have to use a whisk to remove lumps of the jellied part. Stir in pineapple with juice, then sprinkle the plain gelatin on the mixture and let it set a minute or so to soften before stirring in. Fold in orange sections and walnuts, then pour into prepared mold and refrigerate overnight.

When ready to serve, run hot water in the sink and dip mold for 10 seconds, being careful not to let water run over gelatin. Turn onto a cake plate. You may have to return the mold to the hot water for a few more seconds or loosen it with a sharp knife. Garnish with whole cranberries, raspberries, or grapes. If desired, serve with the following topping:

3 oz. cream cheese, softened
1 cup whipping cream

Put these two ingredients in a cold mixing bowl and beat together until thick. Mixture will be slightly lumpy. Be careful not to overbeat or the whipping cream will turn to butter. I put this in a small bowl with a spreader and let my guests add it to their slices individually.

Note: This is my recipe for fake clotted cream. You can add a little sugar if you like, but the cranberry mold is fairly sweet, so you dont notice that the topping isnt sweet unless youre eating it by itself.
