I have been doing low carb since June, and this cheeseburger soup is a huge hit in my house, approved by grumpy hubbie and 5 kids. I got it off recipieczar, and imagine you could add the lettuce, and tomato at the end. I didnt add the sour creram at the end, because I was out, but this is soooo good!


Ingredients
1 lb bacon
2 lbs hamburger
1/2 cup butter
1 1/2 cups chopped onions
2 1/2 cups celery, sliced
2 teaspoons basil
6 cups chicken broth
2 cups cauliflower, broken up
2 cups broccoli, broken up
1 lb grated cheese
3 cups cream or half-and-half
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup sour cream
Directions
1Brown hamburger and bacon in 2 different pans, and then set aside.
2In a large pot saute onion, celery, and carrot in butter until tender.
3Then add in basil chicken broth, cauliflower, and broccoli and cook until tender.
4Then add the cheese, cream, salt, and pepper and stir until cheese melts.
5Remove from heat and then add in the sour cream, bacon and hamburger.

Thank you, everyone for your posts. I'm definitely going to try one or maybe more of the recipes. My sister is looking forward to it as well.

I just wonder how well it would freeze.

Made this last Sunday - I added chopped dill pickles as a garnish. Basically, consider putting anything on it that you would a cheeseburger. We even though that chopped cooked bacon would be a good topper also! Very yummy!!!!
