Smoked Sausage Soup
16 oz smoked sausage, sliced 1 cup onion, chopped 2 t olive oil 2 14.5 oz cans peeled, diced tomatoes, UNdrained 3 1/2 cups hot water 1 cup elbow macaroni, UNcooked 2 cubes chicken bouillon 1 18 oz can kidney beans, drained optional ground red pepper optional In a stockpot, brown sausage and onions in olive oil over med-high heat for about 5 mins. Add tomatoes, water, macaroni, and bouillon; bring to a boil. Add beans, if desired. Reduce heat, cover and simmer for approx 15 mins or until pasta is tender. Season to taste with red pepper, if desired. |
