My mom used to make this all the time and now I make it at least once a month. It is a sort of creamy soup with big chunks of chicken! I like to let this simmer for an hour or so to let the flavors meld, although its good right after the cheese has melted! by Bella
Mom's Rotel Chicken
1 can of cream of chicken
1 can of rotel
1lb. velveeta
1 bag large egg noodles
1 medium onion
1. dice onion and boil chicken
2. cook noodles, drain
3. add soup, noodles, rotel, onion and cheese in a large pot. add enough of the chicken broth from the boiled chicken to make it soupy (about two cans full of the broth)
4. Cook on low until cheese is melted.
