Pumpkin Waffle Cookies

  • Pumpkin Waffle Cookies

    About 4 dozen 2 1/2” cookies

    Cookie Dough
    1 1/3 cups sugar
    1/2 cup shortening
    2 eggs
    1 cup canned pumpkin
    2 teaspoons vanilla

    2 1/2 cups flour
    1 teaspoon salt
    2 teaspoons baking powder
    2 teaspoons pumpkin pie spice

    1/2 cup chopped walnuts

    1/4 cup butter (for brushing the waffle iron)

    Glaze
    2 1/2 cups powdered sugar
    1/4 cup milk
    3 tablespoons butter

    1.Heat a waffle iron to the medium setting.

    2.Cream the sugar and shortening in a large mixing bowl.

    3.Add the eggs and beat until light and fluffy.


    4.Stir in the pumpkin and vanilla; mix well.


    5.Add the flour, salt, baking powder, and pumpkin pie spice.


    6.Turn the mixer to low and mix, scraping the sides at least once.


    7.Fold in the walnuts.


    8.Brush a little butter on the hot surfaces of the waffle iron. Using a tablespoon-size scoop, scoop a balls of dough onto each section of the waffle iron.


    9.Shut the lid and let the cookies bake until lightly browned, 1-2 minutes.


    10.When the cookies are done, use a knife to transfer them to cooling racks.


    11.Repeat, using the remaining dough.


    12.Whisk together the glaze ingredients until smooth and brush glaze on the cooled cookies.


    13.Once the glaze dries, store in an airtight container with waxed paper or parchment between the layers.

      I am so deeply saddened to share with you the news of Peabody, she passed away February 28, 2012. Robyn was a very special lady. I know, I personally thought she was the perfect southern lady. I met her a few times, as she lived right up the road from me. She had a kind and generous heart. I know we will all miss her dearly. She put up a valiant fight in her struggle with cancer.
