    I'm doubling a Mexican rice recipe.

    It calls for 1 cup rice to 2 cups chicken stock. Bring to boil, simmer 25 minutes.

    If I want to double it do I just do 2 cups rice and 4 cups chicken stock? Do I have to consider simmering for a longer time?

    You won't need quite as much as 4 cups of water. Use 3.5 and you can always add.

    I do mine in the microwave - 15 minutes on high and then let it sit for 5 minutes. Perfect every time and it never burns
