  • How do you squeeze a Jalapeno???

    OK, the below recipe calls for 1 tbsp jalapeno juice. Do you know how hard it would be to squeeze a jalapeno to juice it??? Do they sell jalapeno juice, or is it the pickled jalapeno juice from the jar?


    Jalapeno Cornbread
    ==================
    3 tablespoons bacon drippings
    1/2 cup whole milk
    1/2 cup whole buttermilk
    1 large egg
    3 tablespoons vegetable oil
    1 tablespoon jalapeno juice
    2 tablespoons sugar
    2 teaspoons baking powder
    1 teaspoon salt
    1 cup yellow cornmeal
    1/2 cup all purpose flour
    1/4 cup green bell pepper, diced fine
    1 large green pickled jalapeno, diced fine
    1/2 cup fresh or fresh frozen yellow corn kernels

    Preheat the oven to 425F. Put a 8" or 9" cast iron skillet into the
    oven to also be heating up. When hot, remove then add the bacon
    drippings and place back into oven.

    In a large bowl, add the milk, buttermilk, egg, oil, sugar, baking
    powder, salt and jalapeno juice. Mix with a wire whisk until well
    blended. Add the flour, cornmeal, bell pepper, jalapeno pepper, and
    corn kernels. Mix just until the dry ingredients are moistened. Do
    not beat this any more than necessary.

    Remove the skillet and swirl the melted bacon dripping to coat most
    of the inside pan surface. Pour mixture into the skillet and return
    to the oven. Bake for 20 to 25 minutes until light golden brown and
    a toothpick comes out clean in the center.

    Very carefully!!!!

    I think that means juice from the can/jar. There's not enuff juice in fresh jalapeno to get a whole Tablespoon. But thanks for the recipe, my DH will love it.

      hmmm, that's an odd one. I know they have a jalapeno salsa-type stuff. I know they have canned jalapeno's that would have juice, and maybe if you processed (shredded) a jalapeno, there might be some juice. Other than that, I have no idea.

          I would agree, it probably means the juice out of a jar of jalapenos. I have had recipes before that call for that.

            The recipe is referring to pickled jalapeno's.......just dip a little of the juice out of the jar.

              The vinegar will be much hotter than the jalapeno itself. Try to get a Mexican brand can of jalapenos. The taste is excellent and the vinegar is delicious.

                Well practicly speaking...and we all know how practical I am! *cough* If you take a small knife and pierce the tip of 2 jalapeno's, place one in each hand with the pierced side down. Now gently but firmly start to squeeze them. You will notice some give in them and if you continue to put pressure on them you should get about enough juice from the two of them!
                And if you believe that I have some coastland property in Colorado that you can watch the sun set over the Atlantic Ocean that I would like to sell you!

                  Nu, I agree with everyone about using the juice in the jar. That recipe sounds absolutely delicious.
