    Hey, what's for dinner tonight? Tonight we are most likely continuing to go through left over BBQ. Most likely tonight it will appear in a salad form. Grilled meats, grilled veggies, add some tomatoes, cucumbers, cheese, and some balasmic vinegar.


    How about you? What are you having for dinner tonight?

    I've got some pulled pork in the freezer, I put up in individual baggies to make a couple sandwiches. may defrost one of those.

      I'm trying to work off the pounds that I gained from the "grilled cheese" thread! So tonite I'm having a seafood/vegetable medley in light alfredo sauce, and making a low-cal crustless strawberry pie that I found in Special Diets section.

                Shel, this is the best low-cal low-fat alfredo recipe I've found. I have to scale down the recipe because I cook just for myself, but this is really tasty!

                12 Wedges Laughing Cow Light Cheese
                2 Cups Skim Milk
                2 Tablespoons Butter Bud Granules
                1/4 Cup Kraft Reduced Fat Parmesan Style Grated Topping
                1/4 teaspoon Garlic Powder

                In a medium saucepan, combine all of the ingredients and cook over medium low heat until the cheese is melted and the sauce is smooth. Serve immediately.

                Serves: 9 (1/3 cup each)
                Per Serving: 85 Calories; 3g Fat (39.4% calories from fat); 5g Protein; 7g Carbohydrate; trace Dietary Fiber; 16mg Cholesterol; 471mg Sodium. Exchanges: 0 Grain (Starch); 0 Non-Fat Milk; 0 Other Carbohydrates.

                  I'm making Enchrito's like Taco Bell used to make. I better take a Zantac before I eat this!

                        I'm still feeling stuffed from eating at Carrabba's last night. I had the pollo rosa maria chicken with garlic mashed potatoes. I couldn't eat it all and had the rest for lunch today.
                        I ended up getting some free ice cream from them because of my bd.

                        I think I'll just make soup from a can and some grilled cheese. And of course, the strawberry cheesecake that turned out awesome!!

                          Leftover pulled pork sammies on croissants (they need to be used up!) with slaw, mac and cheese and sliced tomatoes.
