Favorite things to do with fresh tomatoes?

Can't buy the single ones since the scare, so bought 6 "vine ripened in Canada" tomatoes last night. I'm never gonna get to all these before they go bad!

slice and sprinkle creole seasoning on them and eat!!!
or slice and sprinkle the green tobasco on them.

use on tacos, burritos, nachos, etc....

dip thick slices in flour and fry them - have them with eggs or just toast.

Where in Canada do they say they are coming from cause there sure aren't any in my area.

caprese salad

sliced tomatoes topped with slices of fresh mozzarella and chopped basil, salt and pepper to taste and drizzle with good olive oil and basmamic(sp) vinegar.

They had a whole newspaper article about where the contaminated tomatoes were coming from, and which were safe. I didn't read the whole article, so didn't see where these were grown.

This is the one I make. I make my crust from scratch though.

Today I have Sunset Campari tomatoes to use in this. DELISH!

Tomato Basil Tart
BY : Jacqui @RQ

1 piecrust (folded dairy section)
1 1/2 Cups mozzarella -- shredded
5 Roma tomatoes -- cut in wedges
1 Cup fresh basil leaves
4 cloves garlic
1/2 Cup mayonnaise
1/4 Cup Parmesan cheese
1/8 teaspoon white pepper

Unfold piecrust and place in a 9" quiche dish or pie plate. Flute edges
and prick with fork (dock). Pre-bake according to package directions.

Remove from oven and sprinkle 1/2 of the mozzarella immediately. Cool on
wire rack.

Arrange tomato wedges over the melted cheese in the shell.

Place basil and garlic in food processor until coarsely chopped. Sprinkle
over tomatoes.

Mix mayo, mozzarella, parmesan and pepper. Spoon over basil mixture,
spreading evenly.
Top with remaining cheese.

Bake at 375* 35-40 minutes until golden and bubbly.

Serve warm.

Edited to add... sometimes I make 'em in mini muffin tins. Takes a little more work, but they're bite sized!

Same here - although I'll take any colored onion, and I want it on white bread with lots of freshly ground pepper too.

Same here - although I'll take any colored onion, and I want it on white bread with lots of freshly ground pepper too.

Oh yes Mew... Has to be fresh white bread, where it sticks to the roof of your mouth..!
