    What is your favorite Flank Steak recipe. Or what is your favorite thing to do with flank steak?

    I bought a couple nice ones today, and all I can think of is Fajitas. What else?

    2 lbs Flank
    1 or 2 (Optional) Chopped Jalapeno Peppers
    1 Chopped Onion
    4 cloves crushed Garlic
    2 Chopped Tomatoes
    1 bunch Fresh Cilantro
    2 Pith removed Lemons, peeled
    2 Pith removed Limes, peeled
    Olive Oil
    Black Pepper


    Place steak in an nonreactive dish. In a blender
    puree remaining ingredients until smooth. Pour over
    steak and turn several times to coat with marinade.
    Cover and refrigerate for 4 hours and up to 2 days.
    Cook on the Grill (medium to medium rare is best!),
    slice against the grain.

    Serving suggestions: Grilled Onions coated with salt,
    pepper, garlic powder and olive oil. Place in foil and
    wrap and place on grill while cooking steak. Also
    delicious on a crusty bread with provolone cheese.

      Amount Measure Ingredient -- Preparation Method
      -------- ------------ --------------------------------
      2 flank steaks -- prick and pound on both sides
      meat tenderizer
      1/4 cup soy sauce
      1/4 cup tarragon vinegar
      1 teaspoon coarse pepper
      2/3 cup onion -- chopped
      2/3 cup bell pepper -- chopped
      1 cup mushroom -- chopped
      1/2 teaspoon salt
      1/2 teaspoon pepper

      Pound steaks on both sides and prick both sides. Wet both sides with hands. Add tenderizer on both sides. Marinate 2 hours or overnitein: the soy sauce, vinegar, salt and pepper. When marinate. Saute onion, pepper in butter till tender add mushrooms and salt, pepper and parsley. Fill steaks with mixture. Roll..long ways. Put tooth picks in to hold. Slice 1 1/2 inch thick. Broil 10-15 minutes. Brush with marniade occassionally. Two per person.

        3 large clove garlic -- minced
        1 piece fresh ginger -- minced (1-inch)
        1/2 cup fresh lime juice
        3 tablespoons sugar
        3 tablespoons fish sauce or vegetable oil
        2 tablespoons roasted unsalted peanuts -- finely chopped
        1 fresh chili pepper or more to taste
        1/4 cup cracked white or black pepper
        3 tablespoons kosher salt
        2 pounds flank steak or top round
        1/2 head napa cabbage -- coarsely chopped
        1 red bell pepper -- cut into thin
        -- Strips
        1/2 cup loosely packed basil leaves
        1/2 cup cilantro leaves
        1/2 cup mint leaves -------if you want...yuk!

        Prepare grill. Whisk together all dressing ingredients in small bowl; set

        Combine chili pepper, cracked pepper and salt in second small bowl. Mix
        well. Rub both sides of steak with chili mixture, pressing down into meat.
        Grill steak 6 minutes; turn and grill to desired doneness, 4 to 6 minutes.
        Remove from grill and set aside.

        Combine cabbage, bell pepper, basil, cilantro and mint in large serving
        bowl. Slice steak across grain into very thin strips. Cut strips into
        bite-size pieces; add to cabbage.

        Stir dressing; add enough to moisten ingredients. Toss to coat.

          I think I'm going to try Eric's, I have a small head of regular cabbage, bet it will work almost as good.
          But like you, no mint!! lol

              This sounds a little weird but it tastes great. Sprinkle both sides of a flank steak with a little garlic salt, black pepper and fennel seed. Yes fennel seed. I know it doesn't sound as if it would be good but it is. It's even better if you let it sit so the flavors can penetrate.
