    How does this thing work??? I know I have used it before, but now when I go into tried and true and type anything in the forum search engine it only brings up the very last entry with that word in it which is always only about 2 days ago!
    I am looking for 2 things: The cake recipe(box I think) that uses Hellman's in it and a Very good tried and true carrot cake recipe to make for Patrick's birthday on Monday.
    Can anyone help me?????Thanks in advance! Michelle

    I think the best carrot cake recipe here is in hall of fame (archives) here it is ....

    Gary Solomon's Carrot Cake

    CARROT CAKE

    2c. All purpose flour
    2tsp. soda
    1/2tsp. salt
    2tsp. cinnamon
    3 eggs, well beaten
    3/4c. vegetable oil
    3/4c. buttermilk
    2c. sugar
    2tsp. vanilla
    1 (8oz.) can crushed pineapples, drained
    2c. grated carrots
    1 (3 1/2oz.) can flaked coconut
    1c. chopped walnuts

    Combine flour, soda, salt, and cinnamon; set aside. Combine eggs, oil, buttermilk, sugar and vanilla; beat until smooth. Stir in flour mixture, pineapple, carrots, coconut and nuts.

    Pour batter into 2 greased and floured 9 inch round pans. Bake at 350 for 35 to 40 minutes or until toothpick inserted in center comes out clean.

    Immediately pour buttermilk glaze evenly over layers. Cool in pans 15 minutes, remove from pans and let cool completely. Spread orange cream cheese frosting between layers and on top and sides of cake. Store cake in refrigerator.

    BUTTERMILK GLAZE:
    1c. sugar
    1/2tsp. soda
    1/2c. buttermilk
    1/2c. butter
    1Tbsp. Light corn syrup
    1tsp. vanilla

    Combine sugar, soda, buttermilk, butter and corn syrup in a dutch oven; bring to boil, cook 4 minutes, stirring often. Remove from heat and stir in vanilla. Pour over cake layers in pan.

    ORANGE CREAM CHEESE FROSTING:
    1/2c. butter, softened
    1 (8oz.) pkg. cream cheese, softened
    1tsp. vanilla
    2c. sifted powdered sugar
    1tsp. orange juice
    1/2tsp. grated orange peel

    Combine butter and cream cheese, beating until light and fluffy. Add vanilla, powdered sugar, orange juice and orange peel; beat until smooth. (You may need to add more powdered sugar to get the desired consistency for spreading.) Spread on cake.I know it sounds like a good bit of work, but it is SOOOOO good.

          This is the only carrot cake recipe that I will make..it is yummo

          Carrot Cake:

          1-1/2 cups salad oil-I use Wesson
          2 cups sugar
          4 eggs
          2 cups flour
          2 cups finely grated raw carrots
          1 tsp. baking soda
          1 tsp. salt
          2 tsp. cinnamon
          1 cup nuts

          Mix oil & sugar. Add eggs, one at a time, beating well. Add flour, soda, salt and cinnamon. Add carrots and last add nuts. Bake at 350* in 9x13-in. pan for 40 minutes or until done.

          Cream Cheese Frosting:

          8 oz. Philadelphia Cream Cheese
          1 lb. or 2-1/2 cups powdered sugar
          1 stick Blue Bonnet margarine
          2 tsp. vanilla

          Mix all together. Spread over carrot cake. Chopped nuts (pecans) may be put over the top if deisired.

            Thanks Martha and Roxy. I will definitely use one of those. Also Martha, thanks for the new site. I will have to check it out later, can't wait but will have to. I took some powerful 60 dollar cough meds this am(with hydracodone) and I just ate lunch and it seems to be kicking into high gear, I'[m about to pass out and need some energy to cook dinner for Patrick's mom later.               okay from the Hellman's web site
              SUPER-MOIST CHOCOLATE MAYO CAKE
              Servings: 12
              Preparation Time: 5 minutes
              Cook Time: 30 minutes


              Ingredients:
              1 box (18 oz.) chocolate cake mix
              1 cup Hellmann'sŪ or Best FoodsŪ Real Mayonnaise
              1 cup water
              3 eggs
              1 tsp. ground cinnamon (optional)


              Instructions:

              1. Preheat oven to 350°. Grease and lightly flour two 9-inch round cake pans*; set aside.

              2. In large bowl, with electric mixer on low speed, beat cake mix, Hellmann'sŪ or Best FoodsŪ Real Mayonnaise, water, eggs and cinnamon 30 seconds. Beat on medium speed, scraping sides occasionally, 2 minutes. Pour batter into prepared pans.

              3. Bake 30 minutes or until toothpick inserted in centers comes out clean. On wire rack, cool 10 minutes; remove from pans and cool completely. Sprinkle, if desired, with confectioners sugar or fill and frost.


              *Or, prepare cake mix as above in 13 x 9-inch baking pan and bake 40 minutes or until toothpick inserted in center comes out clean.


              VARIATIONS:

              For a Pecan Coconut Topped Cake...combine 1 cup flaked coconut, 2/3 cup firmly packed brown sugar and 1/2 cup chopped pecans, then sprinkle over cake batter in 13 x 9-inch baking dish before baking.

              For a Black Forest Chocolate Cake...do not flour baking pan. Evenly spread 2 cans (21 oz. ea.) cherry pie filling over bottom of 13 x 9-inch baking pan, top with prepared cake batter and bake 1 hour or until toothpick inserted in center comes out clean. Cool completely, then turn upside down onto serving platter.

              For a Decadent Chocolate Lava Cake...combine 2 packages (3.4 oz. ea.) instant pudding, 2 cups water, 2 cups milk and 1/3 cup sugar until blended, then pour over cake batter in 13 x 9-inch baking pan. Bake 1 hour or until toothpick inserted along edge comes out clean and serve warm.

              For a Yellow Mayonnaise Cake...substitute 1 box (18 oz.) yellow cake mix for chocolate cake mix.

                My carrot cake recipe is just like Gary's 'cept for the pineapple. I also frost it w/ cream cheese frosting. YUMMY
