got one to try today. have about 4 pounds country ribs and about 5 pounds chicken thighs. how long would you think i need to smoke it, all at one time. it's electric...

I've never used an electric smoker before but with mine wood one I keep my temp at about 250 and I usually cook about 6 to 8 lbs of country style ribs at a time I would day no more than 5 hours. 4-5 hours @210 for the ribs , the last 2hours braise them.....and they will taste like bacon
the only thing I don't like about country ribs are the sharp slivers of bones other then that there good for smoking

So anyways, I would tend to think that the leftover water in the smoker would contain high levels of carcinogens, no? I'm no Alton Brown, but I can't imagine its not only full of fat, but tar and ash and who knows what else.. I wouldn't trust it.. just my opinion..
