  • Yawn, what to make with chicken ...

    I bought a chicken cut into quarters to make for dinner tonite in a pot on the stove...any ideas? I made lasagne with tomato sauce last night, so I prob shouldn't repeat the sauce thing....Dinner tomorrow night is gonna be Mango Chicken (cutlets) with rice so no rice, either.

    I Would Fry The Chicken And From The Drippings In The Pan Make Gravy And Serve This Over Rice. For A Veggie I Would Have Brocolli W/ A Cheese Sauce. And Maybe A Nice Red Lobster Like Bisquit To Finish Off The Meal.

    Sounds Yummy, I Might Have To Have This Soon.

      Squeeze lemon on it then sprinkle with:

      Poltury Seasoning
      Garlic Powder
      oregano
      salt
      pepper
      3 Tblsp water

      Cover with foil. Cook @ 350 for approx 40 min.

          I'd bake it and make the Broiled Ginger Chicken. I've become addicted to this stuff!

          Here is another fast & easy one. I served it when some friends came over and it was easy. I have since made it again and have varied the recipe a bit. I added some orange marmalade to the mayo and YUM!

          Broiled Ginger Chicken

          4 boneless, skinless chicken breasts
          1/2 cup mayonnaise
          1 Tbsp soy sauce
          1/4 Tsp ginger (I used at least 1/2 or more)
          1/8 tsp cayenne pepper (optional, I used a little more)

          Flatten chicken to 1/4 inch thickness. Place on broiler pan rack. Broil for 3 minutes on each side. Combine remaining to make sauce. Brush over chicken. broil 3 more minutes on each side.

          Ang’s notes: I used two chicken thighs, halved the sauce, baked the chicken in the oven until almost done, turned on the broiler, brushed on the sauce (heavy) and broiled for a couple of minutes on both sides.

            I make this all the time the original recipe calls for Chicken Breasts but I like dark meat so I've modified. I also double the rice,onions,garlic, mushrooms, wine and broth.

            Whole chicken cut up recipe wants 2 whole chicken breasts split
            Salt and fresh ground pepper chicken to taste
            2 T butter
            1/2 c. finely chopped onion
            1 t. chopped garlic
            1/3 Lb. fresh mushroms left whole if small or sliced or quartered if large
            1 bay leaf
            1/2 c. dry wine I use Chablis
            1/2 c raw rice [I] use Uncle Ben's long grain
            1 c chicken broth

            Do not skin or bone the chicken. Salt and pepper to taste.
            Heat the butter in a skillet and add the chicken pieces skin down. Brown about 5 minutes and turn.
            Scatter the onion and garlic between the chicken pieces and cook for 5 minutes.
            Add the wine and cook till almost evaporated. Add the rice and broth, taking care that rice does not rest on top of the chicken. Cover and cook about 20 minutes until rice is tender.

            I always cook this longer and check the chicken temperature and rice but that is due to the dark meat and the altitude.

                CHICKEN PAPRIKASH

                This is one I’ve perfected over the years. It’s easy, delicious and your company will be licking the pot clean.

                1 chicken cut into serving pieces or chicken parts of your choosing (I usually skin the chicken)
                2 green peppers cut into wedges
                2 tomatoes (garden fresh if possible) cut into wedges or 1 can of whole tomatoes cut up
                2 onions cut into wedges and separated
                2 tbsp. Hungarian paprika (hot or sweet or mix) (or more)
                Salt and pepper to taste
                Vegetable oil to coat bottom of large pot

                Cut up chicken
                Cut up vegies
                Heat up oil in pot and add paprika and cook for 1 minutes (do not burn)
                Add chicken and coat with paprika/oil mixture. Let cook for 5 minutes stirring occasionally (add more paprika if needed)
                Add vegies, mix well, cover and let cook for about 15 minutes stirring occasionally.
                Check for doneness – chicken pierces easily and clear juices run out, vegies tender.
                Serve with any starch – rice, noodles, potato, spaetzle, etc.

                  I would debone the breast pieces and bake them, then top with monterey jack cheese, let it melt and top with a whole green chile. Preferably a fresh chile that has been roasted to remove the skin.

                    Chicken Adobo

                    8 pieces of chicken, skinned (I use thighs)
                    1 1/2 c. water
                    3/4 c. soy sauce
                    1/4 c. vinegar
                    1/2 onion chopped in large pieces
                    1 tbsp. brown sugar
                    black pepper to taste

                    Place all ingredients into large pan and boil for 1 hour. Add cubed potatoes (as many as you prefer) submerging them in the liquid. Boil an additonal 15 minutes.
                    Be kinder than necessary. Everyone you meet is fighting some kind of battle.
