Defrosted a pound of ground beef. I know I could make burgers or chili or spaghetti sauce. Anyone thinking outside of the box this Monday?

Porcupines
Porcupines are meatballs with rice baked in a tomato sauce.
1 pound lean ground beef
1/2 cup uncooked long-grain rice
1/2 cup water
1/4 cup chopped onion
1 teaspoon salt
1/8 teaspoon garlic powder
1/2 teaspoon seasoned salt
1/8 teaspoon pepper
1 large can (15 ounces) tomato sauce
2 teaspoons Worcestershire sauce
1/2 cup water
Mix the ground beef, rice, 1/2 cup of water, the chopped onion, , salt, garlic powder, seasoned salt, and pepper. Shape the mixture by tablespoons into 1 1/2-inch meatballs. Heat 1 tablespoon vegetable oil in a large skillet and cook the meatballs over medium heat until brown; drain off excess grease. Add tomato sauce, remaining 1/2 cup water, and Worcestershire sauce; heat to boiling. Reduce the heat, cover, and simmer for 35 to 45 minutes.
Seven Layer Casserole with Ground Beef
1 cup uncooked rice, washed and drained
1 cup whole kernel corn, drained
dash salt and pepper
1 can (8 ounces) tomato sauce and 1/2 cup water
1/2 cup chopped onion
1/2 cup chopped green bell pepper
3/4 to 1 pound extra lean ground beef, uncooked and broken up
dash salt and pepper
1 can (14.5 ounces) diced tomatoes, undrained
4 strips bacon, cut in half
shredded cheese, if desired for topping
Place ingredients in a buttered 1 1/2 quart casserole in order given. Cover and bake at 350° for 1 hour. Uncover and cook 30 minutes longer, until bacon is crisp. If desired, top with shredded cheese the last 10 to 15 minutes.
Seven layer casserole serves 4

I was just looking through recipes trying to decide what to cook this week. I am thinking lasagna roll ups. Make your meat pasta sauce, mix thawed spinach , ricotta cheese and seasonings. Boil noodles, spread spinach , cheese mix on cooked noodle and roll up. Pour sauce in baking dish, reserve some, put roll ups in dish, pour sauce over it and bake, covered. uncover and add cheese on top and bake uncovered until cheese melts.

I bet Fatkat's casserole would be good with ground beef and 1/2 a jar or so of salsa...
Biscuits and Gravy Casserole
1 pound ground pork sausage, your preference
1 (8oz) package cream cheese
2 (8oz) packages refrigerated crescent rolls
Preheat oven to 350 degrees. In a skillet, cook sausage and drain. While sausage is hot, stir in the cream cheese until melted and the mixture is creamy.
Open one can of crescent rolls and form the dough into the shape of a rectangle, closing the seams to make one big sheet of dough. Place in a lightly greased baking dish. Spread cream cheese and sausage mixture on top of dough, leaving a 1/2" area around the edges. Repeat steps with the other can of crescent rolls and lay the dough on top of the cream cheese and sausage mixture. Pinch the upper and lower dough edges together.

I would have to say that these are my family's top 4 favorite things to do with beef. We love them all.
Zippy Skillet Rice
1 cup rice uncooked
2 Tblsp butter
1/2 c each green pepper and onion
2 cloves minced garlic
2 cans ( 14 oz. each) diced tomatoes
1 tsp. chili powder
1 tsp salt
1/2 tsp. pepper
1 tsp. tumeric
1 lb. ground beef
1/2 cup shredded cheese
Brown beef in large skillet, drain. In same skillet, saute rice in butter. Add onions and peppers and garlic. Cook about 5 minutes. Add cooked beef and remaining ingredients (except for cheese) Cover and simmer for about 30 minutes. Stirring once or twice until rice is tender. Add water if necessary to cook rice. Sprinkle with cheese before serving.
I rarely add the cheese and I used a can of enchalada sauce for a different taste this last time I made this.
BBQ Hamburgers
1 1/2 lb ground beef
3/4 cup rolled oats
1 cup milk
3 Tblsp onions
salt and pepper
make into cakes and brown
Sauce:
1 cup ketchup
3 tsp vinegar
2 tsp worchestershire sauce
6 tsp onion
1/2 cup water
2 tsp sugar
Heat and pour over cakes. Bake slowly for 1 hour.
Calico Beans
1 can each, green beans, pork and beans, kidney beans, butter beans
1/2 lb. bacon, diced and cooked
1 lb. ground beef, cooked
1 cup chopped onion
3/4 cup brown sugar
2 tsp. salt
1 tsp. dry mustard
1/2 cup vinegar
1/2 cup ketchup
liquid smoke, optional
Mix together. Bake in a slow oven for a couple of hours.
Sometimes in the last 30 minutes, I cover the top with canned bisquits and bake until golden brown.
Favorite Lentils
In a large pot, heat water to boiling
and add lentils.
Cook 20 minutes.
1 1/2 cups lentils
1 qt. water
Saute in skillet,
2 Tblsp. butter or oil
1 med. onion, chopped
1 clove garlic, minced
Add:
1 lb. ground beef
Cook until browned.
Add lentils, water and all to beef.
Add seasonings:
2 beef bouillon cubes
1 tsp sugar
1 tsp salt
1 tsp cumin
1/2 tsp pepper
Cover and cook low for about 30 minutes, stirring occasionally. Add more water if dry.

Mini sliders?
I mix my ground beef with about 1/4 mayo (YES...I KNOW...DONT LECTURE ME), 1/2Tbls wochestercestershioreshire sauce, and some garlic (I use "garlic garlic" from tastefully simple). Mix really well, and form small patties. I use the martins potato dinner rolls (like parker house size) for the rolls. I also put out ALL THE FIXINGS so veryone can make thier own...we call it our "Burger Buffet" night.
I know, I know, its not outside the box...but sometimes the box is nice and cozy.

Those sound good Sewcute. I wish we had Martins here in Texas. We lived in the town that makes them in PA. We miss eating them so much. Everytime we go east (once a year) we buy 4 bags of them.

If you can't figure out what to make with it right now, I'd just crumble it up with chopped onion, cook it, then freeze it and have it sometime in the future. Then you'd have a quick meal, almost ready.
