    I am making out my monthly dinner menu...and am thinking of making some grilled steak enchiladas. I requested a sauce recipe to smother them with..we will see...I may end up just buying or making a marinara sauce? Haven't decided yet. I want to grill some vegetables to smother the grilled steak with...onions. green and red bell peppers. Do I brush some olive oil over the vegetables while I grill them or how should I do it? Also..do you think refried beans would be good in it? I may make some rice to throw in it too or off to the side.

    Yes, I would brush the veggies with EVOO... Everything sounds good..

      I got this recipe for Southwestern Enchiladas off of here years ago. The sauce recipe that comes with it is absolutely delicious and might just work for your enchiladas.

      SAUCE:
      4 tablespoons margarine
      1/4 cup all-purpose flour
      2 cups whole milk
      1 (10 oz.) can enchilada sauce (mild, medium or hot)
      1 & 1/2 cups shredded cheddar cheese

      Melt margarine in a saucepan. Stir in flour until
      smooth. Add milk and enchilada sauce,
      stirring until smooth. Add cheese and olives; stir
      over medium-high heat until mixture begins to bubble.
      Pour sauce over enchiladas and bake for 30 minutes.

        Roxy, When I grill veges. I mix a little olive oil, balsamic vinegar, and pepper in a bowl and brush the veges. as we grill.
