Anybody add any "extras" to your mashed potatoes?? Instead of just the normal butter and milk.

Florida-----have you tried Scallion Champ??? It's an Irish style mashed potatoes with green onions. Simply the best!!
SCALLION CHAMP-------------JAIME OLIVER
6 lg. Russets or 8 med. Yucons
1 1/2c milk
1 bunch scallions, chopped
lotso butter
s/p to taste
Peel spuds, chop and cook to fork tender. Mash or rice them.
While spuds ar boiling, thinly slice the white part of scallions, chop green part 1/4". Combine w/milk in small saucepan, bring to boil, and reduce to simmer for 5 min. Remove from heat and let sit for better infusion of flavor.
Add scallion milk to spuds and mix well. Add 2-4T butter and season to taste.
As the Irish say---"it's Gorgeous"

I've also added diced onions fried in butter and either grated medium cheddar or Cheez Whiz and fresh cracked pepper...Your potatoes will taste like perogy filling...Super yummyA friend is one who walks in when others walk out

I'll throw in 1 or 2 or whatever of the following:
Ricotta cheese,
Cheddar cheese,
PepperJack cheese,
Sour Cream
Mayo
Evap Milk if I have that on hand
Parm Cheese
Bleu Cheese
Cream Cheese
lots of butter of course.
Grated onion
Roasted Garlic
Diced bacon
That's all that comes to mind at the moment.
