    Will this turn out ok in your opinion?

    I am going to buy the meaty spareribs and sprinkle them with Emeril's Essence, rub garlic (that you buy in the jar) over them, and put onions and a thinly sliced lemon on top. Will use a roaster-with a lid on it- and put a little water on the bottom of it and bake it in the preheated 250* oven for 2 hours, drain the liquid or grease, pour Sweet Baby Ray's Bbq Sauce over them and bake another hour at 250*. Does this sound right to you? It has been a long time since I did it this way and forgot how I did it for sure.

    I would use foil and braise them in the BBQ sauce, after the 2 hours of cooking. if you use the pan/lid it will make the BBQ sauce turn into soup and the rib will fall apart.
