4 servings per pound of potato salad or 1/2 cup per person.
But it also depends on the type of "eaters" you might have and how much other food that is being made. Since you are making homemade, I'd start with a 10 lb. bag of potatoes, cut up 5lbs first, see how that "looks" and if it's not "looking" like enough, do some more.....that's what I usually do. Sorry if that's not helpful!!!
The good thing is that potato salad will keep for a few days refrigerated, so if you have more than you need, you can either send home "doggie plates" or save it for another meal.The will of God will never take you where the Grace of God will not protect you.
Faith is believing in advance what already makes sense in retrospect. O:-)

I also figure one or two potatoes per person, depending on size of potato. Not everybody will eat potato salad, and some people may take a second helping. Throw in a couple of extra potatoes to be on the safe side. There will be other food to eat, sounds like the potato salad is a side dish.
