  • Potato Salad help needed asap

    I am known as the "potato salad queen" in our small town LOL, apparently I make good potato salad,,,,I usually make it for anywhere between 6-10 people. Tomorrow we are having a beach party for all the highschool kids that are going off to college/university and I've been delegated to make potato salad for 60 people. I'm mixing all my ingredients in my canning pot. For some reason, I just can't get the flavour right! aggghhh PANIC!!!! this huge size salad has completely thrown me outta whack! I've given up now, going to let it sit over night and wait for the favours to meld,,,,,if I need to tweak it in the a.m. what do I add? more salt? My version of this salad is: mayo, fresh dill, pickle juice, some cream or milk to make it nice and creamy, onions, celery, chives, eggs, squirt of mustard, S&P. Right now it seems to be kinda dry and just ho-hum. What should I add for a bit of pizzaz??? if need be,,,,thanks!!!!

    I like Mircale Whip over Mayo because it has some zing to it. Add a little apple cider vinegar to some more mayo for a creamier consistency and for more tanginess. Good Luck.

          Making that much potato salad is a bit tricky! I think you are on the right path to let refrigerate overnight to let the flavors meld. Whatever you do DONT PANIC!!! Remain Calm and taste it after it is completely cooled then adjust what is necessary...whether it be more Mayo, salt ect....> do you have enough pickles & onion? Celery? Most of the vegetables will make more juice after you refrigerate them for awhile. I also like to use some freshly minced garlic in mine....Good Luck & I am sure it will be as scrumptious as your smaller version Hun! Miracle Whip is a good idea Allie, if you need that Zing...I am just a Mayo Person... now that I don't need it.......... I LOVE it!!!..LOL! Hugs!

            I know what you mean. Sometimes it just isn't working. Then it is trial and error - as is most of my cooking! When I need some more zip, I had more mustard. You might just take a little out and see what works. Sometimes I use a chipotle mustard. Maybe a little milk?

              I never have used milk or cream in potato salad. May have to try that out....

                I prefer mayo,,that is what I've always used. The salad so far seems a little dry and, flavour a bit bland. I'm just don't to ruin my reputation LOL!!!! Thanks everyone. I will taste and test in the morn,,,you may hear from me again!

                    Make sure you have enough salt as that could make it a little bland.

                      I'm going to bet mustard. When making mine, my DH is always the taste tester. If it's missing something, it's almost always mustard!!!


                      And, I like to add a few shakes of redwine vinegar in mine!

                        Well, if it is still dry in the morning, more mayo and pickle juice would be my bet. Good luck.

                          Sorry this is late......but I would MIX it in the size batches that you usually do........!!!!! Then put into larger containers AFTER it is mixed, refrig and taste after it gets cold and you can add whatever you need, and just stir b/f serving -- give it a taste, I'm sure it will be fine!!!

                            Doreen! What a great idea! Next time I have to double, triple or whatever, one of my recipes, that is EXACTLY what I will do!

                              LOL, doreen beat me to it. That is exactly what I do, when I have to make a larger then usual amount, and it works.
