I am known as the "potato salad queen" in our small town LOL, apparently I make good potato salad,,,,I usually make it for anywhere between 6-10 people. Tomorrow we are having a beach party for all the highschool kids that are going off to college/university and I've been delegated to make potato salad for 60 people. I'm mixing all my ingredients in my canning pot. For some reason, I just can't get the flavour right! aggghhh PANIC!!!! this huge size salad has completely thrown me outta whack! I've given up now, going to let it sit over night and wait for the favours to meld,,,,,if I need to tweak it in the a.m. what do I add? more salt? My version of this salad is: mayo, fresh dill, pickle juice, some cream or milk to make it nice and creamy, onions, celery, chives, eggs, squirt of mustard, S&P. Right now it seems to be kinda dry and just ho-hum. What should I add for a bit of pizzaz??? if need be,,,,thanks!!!!
