  • Mayonnaise?

    When you make potato salad or macaroni salad..are you suppose to let them cool before adding mayo to them?

    I've often read that you should mix your mayo into "warm potatoes or pastas" while still warm so it better absorbs the "flavor" of the mayo/dressing. But usually, I end up chilling my potatoes or pasta first because on the flip side of the "absorption theory", I feel that potatoes firm up better once cold and don't crumble up so much like when they are still warm when I'm trying to add the dressing to it.......not so much with pastas.

      with potato salad, I've always let the potatoes cool first. I always thought that warm mayo isn't safe unless you eat it right away.

          it cools first.

          i mix everything, and add my blue plate mayonnaise after it's cool.
          I just hold on tighter, to a hand that's stronger...he knows my every thought, he clears my weary heart, and hold's on tighter...
