Rum or Boubon Balls
1 cup Chocolate Chips
3 TSP light Corn Syrup
1/2 cup Run or Bourbon
2 1/2 cups Vanilla Wafers, crushed (about one 10 ounce box)
1 cup Powdered Sugar, divided
1 cup finely Chopped Nuts
PREPARATION:
Place the chocolate in a large microwave safe bowl and microwave, stirring every 45 second intervals, until melted. When melted add rum (or bourbon) and the syryp into chocolate mixture and stir until well mixed. Add wafer crumbs, nuts and 1/2 cup powdered sugar. mix well and refrigerate about an hour. Remove from fridge and form in balls using a teaspoon for measuring. Put the remaining 1/2 cup sugar in a bowl and roll the balls in the sugar. Refrigerate them for at least 3 days before serving them. The longer they sit the better they get! Store in an airtight container in the refrigerator for 2-3 weeks.
