  • Crawfish Ettouffee recipe search

    I recently at at Oceana Grill in New Orleans and had their Crawfish Ettouffee.

    It tasted as though it had black bean puree and smoke flavoring in this recipe.
    It is not a recipe they give out.

    Any ideas where I might search for a similar recipe?

      I'd try foodtv - bet under Emeril's recipe there would be a similar one.

              call them, tell them you had lunch there with a friend.
              tell them you busted out in a horrible reaction, throat swelled up, rash and a night in the Emergency room..... i had water with lemon, and the crawfish ettouffee... i've eaten that for years, but there must be a herb a seasoning or something in it that i am allergic too. can you read me the ingredients?

              this is worked for me all 5 times I did it.
              sneaky? prolly.
              from the ingredients you may be able to go from there.

                Crawfish, Shrimp, and Lump Crabmeat Etouffée Recipe

                Look for crawfish tails in the freezer section of your supermarket, or use 1 1/2 pounds shrimp and 1 1/2 pounds crab and omit the crawfish. Recipe courtesy of Tabasco guest chef Stanley Dry.

                Ingredients
                1/2 cup butter
                2 onions, chopped
                2 stalks celery, finely chopped
                2 1/2 cups lower-sodium chicken broth
                1/4 cup flour
                1 pound crawfish tails
                3 tablespoons lemon juice
                1/2 teaspoon salt
                Cayenne pepper
                2 teaspoons Tabasco sauce
                1 pound peeled and deveined shrimp
                1 pound lump crabmeat
                1/4 cup chopped green onion tops
                1/4 cup chopped parsley
                3 cups cooked white rice
                Instructions
                1. Melt butter in a heavy pot over medium heat; add onions and celery and cook until softened, about 10 minutes.
                2. Whisk chicken broth and flour until smooth. Add to celery mixture. Bring to a boil, reduce heat, and simmer until thickened, about 30 minutes.
                3. Add crawfish and cook 15 minutes. Add lemon juice, salt, cayenne and Tabasco. Add shrimp and cook until shrimp are cooked, about 5 minutes. Add crabmeat, green onions and parsley and cook 5 minutes. Serve over rice. Serves 8.


                Nutritional Information
                Per serving: 340 calories, 13g fat, 228mg chol., 31g prot., 21g carbs., 2g fiber, 770mg sodium.

                  Here's a recipe that I have:

                  1 tsp salt
                  1 tsp pepper
                  1/4 tsp paprika
                  2 pounds peeled and cooked crawfish tails
                  1/2 cup butter
                  1 large onion chopped (about 2 cups)
                  1 tbsp garlic, minced
                  1 tbsp grated lemon rind
                  1 tbsp flour
                  1/2 cup green onion
                  1/4 cup parsley flakes
                  juice from 2 lemons
                  1/4 cup Tabasco sauce
                  1 1/2 cups water
                  3 cups cooked rice

                  In a bowl mix salt, pepper, paprika and crawfish tails. Mix well. In a skillet melt butter and add onion, garlic and lemon rind. Cook for 5 minutes then add crawfish tails with seasoning and cook 5 minutes more. Sprinkle flour and stir well. Cook until flour is well mixed. Add green onion, parsley, lemon juice, Tabasco sauce and stir well. Add water and simmer for 10 minutes. Serve over hot rice.
