I like this cake because it "travels well" especially during the hot months - no worry about frosting melting:
Old Fashioned Cinnamon Cake
Oven 350 - greased/floured 9x13 pan
Cake:
4 large eggs
2 c sugar
2 c flour
1 c milk scalded with 1 stick butter or margarine (do NOT boil)
2 tsp baking powder
1/2 tsp salt
1 1/2 tsp vanilla
Topping:
1/2 stick butter or margarine melted
1/2 c sugar mixed with 1 Tbsp cinnamon
Whisk together flour, salt and powder and set aside. Beat the eggs and sugar until very thick. Add the vanilla and blend.
Add the dry ingredients and mix well. Add the warm milk/butter mixture all at once and mix being sure to scrape bottom and sides of the bowl. Pour into prepared pan.
Sprinkle the top with the cinnamon sugar and then drizzle the melted butter over the top. Bake for 30-40 minutes until it tests done. Cool on rack.
You can, of course, bake this in a jelly roll pan or layer pans if you wish - just adjust baking time. I also have a large stainless lasagna pan I use on occasion for this cake, and increase ingredients by half, i.e. six eggs instead of four, etc.
