  • need appetizer help what to bring?

tomorrow is a exciting day. Last 7 years it always has been.
August 24th is my cousin laura's birthday.
    she'll be 39.

Laura is battling Sinovial Sacrcoma cancer. I spelled that wrong too. the cancer is in her lungs now. she's been battling that for 3 and a half years. since it's been in her lungs.
but she's doing really really well. with chemo pills, and doing her own herb thing on the side, MDAnderson said she is their healthiest cancer patient. every three months she has scans. if the cancer shows the tumors are alive or growing again, then they will cut off treatment, the chemo pills. so in laura's mind she's every three months.

well tomorrow is her birthday. we are invited, at last minute (long story)
but they are throwing together a fast little surprise party for her.

    need an appetizer.
    what do I do?
something that i can maybe throw in the crock pot? or a cold dip?
this isn't a huge ordeal thing, just a visit sorta thing she had a big party last weekend when she was out of state with her in laws.
I just hold on tighter, to a hand that's stronger...he knows my every thought, he clears my weary heart, and hold's on tighter...

I have a fairly easy dip for you...will feed a lot as a dip...You probably already have this...it's an oldie but goodie...After you brown meats...throw it all into crock pot...simmer till all mixed

    1 lb Velvetta Cheese, cubed
    1 lb extra lean Hamburger
    1 lb bulk Sausage
    1 can Rotel Tomatoes
    1 Onion, chopped
    1 clove minced Garlic
    1-2 TBS Chili Powder
    1 TBS Vinegar
    1 TBP Worchestershire Sauce
1 can Cream of Mushroom Soup

Brown meats, & onion. Drain fat. Add soup, garlic, tomatoes, chili powder, vinegar, & worchestershire... add velveeta and stir until melted. Serve warm with tortilla chips....
You can also make a casserole with tis by layering corn tortillas that are cut in quarters, until dip is all used up. Bake in 350 degree oven for 20-30 minutes..Sour Cream & Pico de Gallo make good toppers too.

Sorry, no quick and easy or exciting and different appetizer recipes come to mind (perhaps check the CK archives?) but I did want to wish your cousin a happy, happy because it's a wonderful thing for her to be able to celebrate......ENJOY!!!!

Ah. My Famous Corned Beef Dip

2 Packages of Corned Beef (you know, like the Buddig Brand, - cheap) cut up into pieces
          1 Cup Sour cream
          1/2 Cup Mayo
          1Tbs Parsley
          1 Tbs Minced Onion
          2 tsp Dill Weed
Little Salt and Pepper to taste

Pick up a whole Pumpernickel Round (1 to 2 lbs) from the Grocery Deli - if they don't have one, then order one
          Mix all ingredients in bowl
Cut off top of bread, scoop out insides of bread
          Put dip into bread bowl
use the pieces from the inside and top to dip
Scoop Fritos are also really good with this dip
