  • Spanish Slaw??

    I am really not sure what this is called, but I always see it at Luby's Cafeteria, and it's pretty good. It is coleslaw, but has green peppers, tomatoes and onions in it, and not sure what else... Not a creamy sauce, more of an oil based sauce....

    Does anyone know what I'm talking about? It is not spicy either, just real flavorful.... I would love to try and make this at home....

    This one don't have tomatoes........

    Zesty Coleslaw

    * 6 cups shredded cabbage
    * 2 medium carrots, shredded
    * 4 celery ribs, chopped
    * 1/2 cup finely chopped green pepper
    * 1/2 cup finely chopped onion
    * 1/2 cup cider vinegar
    * 1/4 cup vegetable oil
    * 1/4 cup sugar
    * 1 1/2 teaspoons salt
    * 1/4 teaspoon pepper
    * 1/4 teaspoon paprika




    In a large bowl, combine the cabbage, carrots, celery, green pepper and onion. In a jar with a tight-fitting lid, combine the vinegar, oil, sugar, salt, pepper and paprika; shake well. Pour over cabbage mixture and toss to coat. Cover and refrigerate until serving.

      I found this one on taste of home.

      INGREDIENTS

      * 6 cups shredded cabbage
      * 1 cup chopped cucumber
      * 1 cup chopped tomato
      * 1 cup chopped green pepper
      * 1 cup sliced green onions
      * 2/3 cup spicy vegetable juice
      * 1/4 cup red wine vinegar
      * 2 teaspoons sugar
      * 1 teaspoon celery seed
      * 1/2 teaspoon pepper
      * 1/4 teaspoon salt


      DIRECTIONS

      1. In a large bowl, combine cabbage, cucumber, tomato, green pepper and green onions; set aside. In a small bowl, combine remaining ingredients; mix well. Pour over cabbage mixture and toss gently. Cover and chill for 2 hours; stir before serving.

          LUBY'S SPANISH SLAW WITH DRESSING


          -----SLAW-----
          2 lb Cabbage
          1/4 c Parsley sprigs, coarsly
          -chopped
          1/3 c Shredded carrot
          1/2 c Green bell pepper strips
          1 T Diced red bell pepper
          1/4 c Green onions, sliced 1/8
          -inch thick
          1 c Dill pickles, sliced 1/8
          -inch thick
          -----DRESSING-----
          1/2 c Water
          1/3 c Dill pickle juice
          1/4 c White vinegar
          1 T Sugar
          1 T Salad oil
          1 t Salt
          1 t Freshly ground black pepper

          Spanish Slaw
          Discard outer leaves from cabbage; wash head and cut in half. Remove
          center core. Cut into 1/8-inch strips against the vein. Cut pieces into
          2-inch portions. Place in a large serving bowl. Add parsley, carrot, bell
          peppers, onions and pickles. Pour dressing over top and mxi well. Chill
          until ready to serve.

          Dressing
          In a medium-size bowl, whisk together water, pickle juice, vinegar,
          sugar, oil, salt and pepper. Use as directed above.

              Thanks Eric! Well, I'll be darned. So that's red bell pepper, not tomatoes.. Been a while since I've had it... I am going to try all three recipes!

                  I haven't had a chance to make it yet, but have it on the kitchen counter so I won't forget to pick up the ingredients. Sounds awesome..
