I see that they call for Bread Flour. I have never seen Bread Flour! Maybe because I wasnt looking for it?? Is it sold normally at Grocery stores? I also read that "always" use "active" yeast, not the dry yeast. Help!

Bread flour is sold in grocery stores right next to the regular flour. Active yeast is dry yeast. There are other types of yeast sold in health food stores that wouldn't be appropriate for baking bread.Be kinder than necessary. Everyone you meet is fighting some kind of battle.

I do know that flour makes a difference-I had been using the really cheap flour and having loaves that didn't rise.
I guess that bread flour has more gluten. Anyway, I have had no problems since buying flour that is recommended for bread.

I use to not think the kind of flour makes a difference, thought flour was flour. Saw some Gold Medal "Better for Bread" flour on sale, bought some, and OMG! What a difference. It's right there with the other flour, just says "better for bread on it" I use the jar of bread machine yeast, it's dry. Diff flours create diff levels of glutens. Glutens are the strands that keep the food together.
Picture a moist thick slice of cake...its soft and easily attaches to the back of a fork when smashed. Try spreading butter right from the fridge on the slice of cake...
Now picture a thick hunk of bread...it's "heartier" and can hold up better to butter and other spreads. can you imagine the "holes"? The "holes" in the bread are bigger than in the cake.
The right FLOUR makes it all possible.
