  • Need new ideas on Sweet Potatoes

    Ok we are doing thanksgiving next weekend since my GN & GN will be at there dad's on the actual day. I usualy make candied sweet potatoes with a brownsugar syrup. But some of the family is dealing with type 2 diabetes and I would like to do something without sugar. I need ideas. I was thinking on just baking some. But would like something else new. Get your thinking caps on ladies.

    I haven't tried the brown sugar splenda, but I hear it's good. May make them the same way and just use that. I've made several desserts using Splenda and no one realized it was sugar free.

        We love them just baked with lots of butter, they are plenty sweet enough all on there own also good just boiled and mashed.

          I just bake mine, too. I love the cinnamon butter on them but I don't think that would work for the diabetics unless you used Splenda.

              sweet potato surprise balls !!!!

              i have 24 in my freezer right now. they are so fun and just different. we all love them.
              i made them for the first time last month's freezer session.
              i have to tell you they were not easy to make. secret is, lather your hands with butter. grab a wad of potatos and pat it in your hand, take the marshmellow and place on top get another wad and smack on top of marshmellow, flop it from hand to hand and roll a tad, plop in the pie plate with the crushed flakes, roll around lightly freeze on a cake cooling rack, so when you bake them they are easier to handle. do not microwave, BAKE them, 400 degree oven for 10 minutes. DO NOT MICROWAVE, the marshmellow explodes.
              do not ask me how i know this.

              8 large sweet potatoes, cooked and mashed
              2 eggs
              1 tablespoon butter
              1 teaspoon grated orange rind
              1 teaspoon brown sugar
              1/2 teaspoon vanilla
              14 large marshmallows
              3 cups cornflake crumbs
              Mix together mashed sweet potatoes, eggs, butter, orange rid, brown sugar& vanilla.
              Form into 14 large balls.
              Place in center of each ball 1 large marshmallow and cover it well with mashed-potato mixture.
              Roll ball in cornflake crumbs.
              Flash freeze and bag for freezer.
              When ready to serve, defrost and bake at 400F in buttered baking dish for 10 minutes

                OH and these are not little balls, they are huge!! compared to me being use to a meatball, they are like a tennis ball. which makes them so much more funnier on the plate.

                  I like the Splenda Brown but you only use half as much as a recipe calls for because it is 1/2 Splenda and 1/2 Brown sugar. It's the carbs that a diabetics watch now. I know DH was told to no more than a certain number per day. It's not easy.

                    I love em that way, too, but don't think that would work for Thanksgiving. I really don't have any different recipes for them. I'd like some recipes, too.

                      I love them baked with butter too. Naturally sweet....
                      I am so glad to get this recipe from you Stella! Thanks! It does sound fun & tasty too. The tips are great as well.
                      I always make sweet potatoes with a pecan prailine topping. DIL LOVES it. The recipe is on the can of sweet potatoes...very easy and good.

                        Actually, this is an OLD idea already mentioned. They are wonderful baked. We even take them to the table in a bowl while still in their skins. A few extra napkins for grabbing the sweet spud allow for holding while cutting, pushing the lovely steaming flesh out or maybe putting a half back if they're especially big. They're mavelous just with butter, maybe salt and pepper to taste. Some family members use gravy over them rather than butter. There is such a wealth of fancy/rich/sweet things on the Thanksgiving table already (not to mention pies to come later!) that this has always been my family's favorite way to have the sweet potatoes on this holiday.
                        On the other hand, for everyday use, we've been known to fry quartered and sliced sweet potatoes with onion in the same manner as making raw fries. Hhhmmm!

                          I know this isn't just plain sweet potatoes but it's really good. It's a recipe I found on a recipe site for a famous resturant here in Boulder.

                          Serves 4-6
                          Ingredients:
                          • 1 Large yam
                          • 3 Large Yukon gold potatoes
                          • 2 cups heavy cream
                          • 1 sprig fresh, chopped tarragon
                          • 1 tablespoon roasted garlic puree
                          • Dash freshly ground nutmeg
                          • Pinch of cayenne pepper
                          • Salt and pepper to taste
                          • Bread crumbs
                          Directions:
                          1. Preheat oven to 350 degrees
                          2. Prepare a buttered 9x9 baking dish
                          3. In a large mixing bowl, combine heavy cream, tarragon, roasted garlic puree and season generously with nutmeg, cayenne and salt and pepper to taste
                          4. Divide mixture into two bowls
                          5. In one bowl, place thinly sliced yam and put thinly sliced potatoes into the other bowl
                          6. Toss until mixture is between all slices in both bowls
                          7. Alternate layers of each into baking dish and press down to make layers even
                          8. Cover with foil, perforate and bake for one hour
                          9. Uncover, top with bread crumbs and toast in oven for an additional 10 minutes
                          10. Remove from oven and let cool before serving

                            Thanks gals for all your ideas. As always much helpful. I think I am going to try this recipe along with some baked ones and a small pan of regular candied sweet potatoes.

                              Huffle the resturant is called Flaggstaff House. The make the potatos as part of a Thanksgiving dinner they prepare and you just have to heat up. So you can make them in advance and just bake to finish on Thanksgiving.
